WHITE SEAFOOD LASAGNA

Steps:
- Preheat oven to 350°. Cook lasagna noodles according to package directions; drain., Meanwhile, in a large skillet, heat butter over medium heat. Add shrimp and scallops in batches; cook 2-4 minutes or until shrimp turn pink and scallops are firm and opaque. Remove from pan., Add garlic to same pan; cook 1 minute. Add wine and lemon juice, stirring to loosen browned bits from pan. Bring to a boil; cook 1-2 minutes or until liquid is reduced by half. Add crab; heat through. Stir in shrimp and scallops., For cheese sauce, melt butter over medium heat in a large saucepan. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat; stir in remaining cheese sauce ingredients. In a large bowl, combine ricotta mixture ingredients; stir in 1 cup cheese sauce., Spread 1/2 cup cheese sauce into a greased 13x9-in. baking dish. Layer with 3 noodles, half of the ricotta mixture, half of the seafood mixture and 2/3 cup cheese sauce. Repeat layers. Top with remaining noodles and cheese sauce. Sprinkle top with 1 cup mozzarella cheese and 1/4 cup Parmesan cheese., Bake, uncovered, 40-50 minutes or until casserole is bubbly and top is golden brown. Let stand 10 minutes before serving. Sprinkle with parsley.

- In a small bowl, combine crab and shrimp; set aside. In another bowl, combine the ricotta cheese, eggs and Italian seasoning until smooth; set aside., In a large skillet, saute mushrooms and onion in butter until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually add evaporated milk and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in 1/2 cup Parmesan cheese, salt and pepper until cheese is melted., Spread 1 cup mushroom sauce in a greased shallow 4-qt. baking dish. Layer with three noodles and spinach. Top with a third of the ricotta mixture, a third of the mozzarella cheese and a third of the mushroom sauce. , Top with three noodles and crab mixture. Repeat with ricotta mixture, mozzarella cheese and mushroom sauce. Layer with remaining noodles and the broccoli. Repeat with remaining ricotta mixture, mozzarella and mushroom sauce. Sprinkle with remaining Parmesan cheese. , Bake, uncovered, at 350° for 45-55 minutes or until a thermometer reads 160°. Let stand for 10 minutes before cutting.

Lasagna Alfredo with chicken, ricotta and spinach. So good that my family requests it at least once a week. Serve with diced tomato as a garnish.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cook spinach according to package directions; drain.
- In a medium bowl, combine chicken and one jar of Alfredo sauce, stir together. In a separate bowl, combine ricotta and drained, cooked spinach, and stir.
- In a 9 x 13 baking dish, place one layer of lasagna noodles, edges overlapping. Pour chicken and Alfredo sauce mixture over noodle layer and spread evenly. Sprinkle 1 cup of shredded mozzarella over chicken mixture. Top with another layer of noodles. Spread spinach mixture evenly over noodles. Pour 1/2 of remaining jar of Alfredo sauce over spinach mixture, spread evenly. Sprinkle another cup of mozzarella over sauce, lay on the final noodle layer and top with remaining 1/2 jar of Alfredo sauce, 2 cups of mozzarella, and salt and pepper to taste.
- Bake 50 to 60 minutes, until top is brown and bubbly.

SEAFOOD LASAGNA ALFREDO
This looks like it should be horribly difficult, but it's really simple. If you are a beginner cook and REALLY want to impress people, this is the recipe for you. I use fresh garlic and garlic powder - feel free to cut back on either. We actually prefer this made with surimi (fake crab meat) rather than fresh crab, but either is fine. Make sure the crab is picked over for shells. Feel free to toss in some scallops too - just saute them for a few minutes in some butter first. Substitute 1 box of chopped broccoli, defrosted, for the spinach, if desired, or omit entirely.

- Preheat oven to 350 deg. F.
- Melt butter in medium saucepan over low heat; add garlic.
- Remove from heat.
- Stir in flour, stir until smooth.
- Stir in milk and broth and return to heat. Bring to boil, stirring constantly. Reduce heat to low.
- Stir in mozzarella, onions, basil and oregano. (add SALT if desired).
- Cook over low heat, stirring constantly, until cheese is melted. Set aside.
- Beat egg, and add ricotta. Mix till smooth. Add pepper, garlic powder and onion powder.
- Spread a thin layer (about 1 cup) of cheese sauce in 13x9-inch baking dish.
- Top with 3 or 4 uncooked noodles.
- Spread 1/2 of ricotta cheese over noodles.
- Sprinkle all of spinach over cheese, trying to avoid clumps.
- Sprinkle with 1/2 of shrimp and crab.
- Pour about 1 cup cheese sauce over, and top with 3-4 uncooked noodles.
- Repeat layers with remaining ricotta cheese, seafood and a final layer of uncooked noodles. Top with all of remaining cheese sauce.
- Sprinkle with parmesan or romano cheese.
- Bake, uncovered for about an hour.
- Let stand 10 minutes before serving.

SAUCE; Combine cream, lemon peel, parmesan cheese, salt and in a saucepan set over med-high heat, stirring often, until bubbles form around the edge of pan Reduce heat, simmer for 2 minutes or until sauce is slightly thickened. EASY ALFREDO LASAGNA
You can spread a red meatsauce over top for a pretty contrast if you like. You can make this in bread pans and eat one now and freeze the other for later. Or make a big batch and watch it be devoured at your next holiday gathering. This came from Savvy Holiday Entertaining.

- Combine ground beef and sausage with your choice of seasoning and cook over medium heat until brown. While the meat mixture is cooking, mix together ricotta and parmesan with eggs. Stir until blended, set aside.
- When the meat is browned, drain as much grease as possible from it before stirring into egg and cheese mixture.
- Spray a bread pan or casserole with non-stick cooking spray. Pour in enough sauce to cover the bottom of the pan, layer in a noodle. In the bread pan, one noodle fills the bottom and makes layering a snap.
- Next, layer on meat mixture and top with shredded mozzarella. Repeat layering process with sauce, noodle, meat and cheese. Pour a final layer of sauce and then top off with cheese. Cover with foil and bake about 35 minutes, until mixture is bubbly, then remove foil and bake another 10-15 minutes until cheese is melted and edges are brown.
- Remove from oven, let cool a few minutes before plating. Serve with warm, crusty bread and a green salad for a lovely and simple meal.
CREAMY SHRIMP LASAGNA
Not for those on a diet, but a calorie filled lasagna thats a slice of heaven. My neighbour served this to me during the holidays and I asked her for the recipe. Some one notified me that this is a recipe from 2007 Chatalaine Magazine.

Steps:
- Heat oven to 350. Place shrimp in a strainer and rince under cold water if you are using frozen shrimp. Pat dry and remove the tails.
- In a bowl stir the pasta sauce with the cream, basil and oregano. Taste and add more seasonings if needed.
- Stir ricotta with dill in a small bowl.
- Grate cheeses then stir together.
- Spread about 1/2 cup of sauce in the bottom of a 9 x 13 pan, top with 3-5 lasagna noodles,try not to overlap them.
- Spread 1/2 of the ricitta mixture.
- Cover with 1/2 of the tomatae sauce.
- Scatter 1/2 of the shrimp on top .
- Then comes 1/2 of the cheese over the shrimp.
- Put more noodles , then layer again .Ending whith a layer of noodles , the rest of the sauce and then topped with cheese.
- Baked uncovered in the centre of the onen until sauce is bubbly. Takes about 1 hour and let stand for 10 minute before serving.
- When you have finished your meal -- run around the block.
- This can be made a head just bake it for 30 minutes. Let cool ,.
- cover and refridgate overnight.
- Remove from fridge, uncover and let it come to room temperature 30 minute Reheat at 350 for 30-40 minute Cover loosely if it gets too brown around the edges.
