Orzo with Chick Peas image

Steps:

  • Bring a large pot of salted water to a boil. Add orzo and cook to al dente.
  • Heat extra-virgin olive oil in a skillet, add zucchini, onions and garlic, season with salt and pepper and cook 6 to 7 minutes until tender, add chick peas and heat through. Toss with herbs, orzo and cheese, adjust salt and pepper and serve.

1/2 pound orzo
2 tablespoons extra-virgin olive oil
1 small to medium zucchini, diced
1/2 red onion, chopped
3 cloves garlic, chopped
Salt and freshly ground black pepper
1 (15-ounce) can chick peas, drained
1/2 cup parsley leaves, chopped
1/4 cup mint leaves, finely chopped
1/2 cup feta or goat cheese, crumbled

Chickpea and Orzo Soup image

Steps:

  • In a large saucepan, sauté the garlic, onion and rosemary in oil until the onion is soft, about 5 minutes.
  • Add tomatoes and chickpeas. Cook for 15 minutes.
  • Add beef stock, orzo and salt and pepper. Heat thoroughly and let simmer for twenty minutes before serving, or put in a slow cooker on low for the day.
  • Serve the soup with bowls of chopped parsley and parmesan cheese.

  • Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 3 minutes, stirring occasionally. Add carrots and garlic and sauté for 5 more minutes, stirring occasionally.
  • Add stock and chickpeas, and stir to combine. Continue cooking until the soup reaches a simmer. Then reduce heat to medium (or medium-low), whatever works to maintain a steady low simmer.
  • Add orzo and stir to combine. Continue cooking until the orzo is al dente, stirring occasionally so that the orzo doesn’t stick to the bottom of the pan.
  • Meanwhile, as the orzo is cooking, whisk together the eggs and lemon juice in a separate mixing bowl or measuring cup until combined. Ladle out 1 cup of the hot soup broth, and while whisking the egg mixture with one hand continuously, very very slowly drizzle the broth into the eggs until combined. Repeat with 1 more cup of hot broth.
