A delicious runny yolk egg cooked in the center of a piece of toast and eaten with a fork is a great way to enjoy an egg in a slightly different way. My kids feel fancy when eating these.

  • Melt the bacon grease in a non-stick pan over low heat.
  • Cut a 1 1/2 to 2-inch hole from the center of the bread slice; lay in the hot skillet. When the side facing down is lightly toasted, about 2 minutes, flip and crack the egg into the hole; season with salt and pepper. Continue to cook until the egg is cooked and mostly firm. Flip again and cook 1 minute more to assure doneness on both sides. Serve immediately.

Steps:

  • Whisk half-and-half, 1 egg, sugar, cinnamon, and salt together in a bowl until batter is smooth.
  • Place 2 bread slices on a work surface and top each with 1 slice American cheese, 1 slice Cheddar cheese, and crumbled bacon. Top each with a second piece of bread, making a sandwich. Cut a 2-inch hole in the center of each sandwich using a biscuit cutter or 2-inch wide glass.
  • Melt butter in a large nonstick skillet over medium-low heat, tilting the skillet to cover entire surface with butter. Dip both sandwich rings and cut-out holes in the batter until evenly coated.
  • Place the dipped sandwich rings and cut-out holes in the melted butter in the skillet. Immediately crack an egg into the hole of each ring. Cook until egg white is set, bread is golden brown, and cheese is softly melted, about 2 minutes per side.

Hangover Egg-in-the-Hole Grilled Cheese Sandwich image

Steps:

  • Spread 1 side of each slice of bread with mayonnaise. Top 1 slice with American cheese and the other with pepper Jack, then sandwich them together. Cut the center out of the sandwich with a 2 1/2-inch ring mold.
  • Crack the egg into a small bowl.
  • Melt the butter in a medium nonstick skillet over medium-low heat, and swirl to coat the bottom. Arrange the inner and outer parts of the sandwich in the skillet, and cook until golden brown on the bottom, 4 to 5 minutes. Turn each over, pour the egg into the hole, sprinkle with salt and pepper and cook until the bottoms of the bread are golden brown, the egg whites are set and the yolk is still runny, 4 to 5 minutes. For the last minute of cooking, cover the pan with a lid to cook the egg white completely through. (The sandwich round may finish cooking faster.) Transfer the sandwich with the egg to a serving plate along with the sandwich round, to dip into the egg yolk.

Steps:

  • Butter one side of each slice of bread, and place on your work surface, buttered side down. Using a 2 1/4-inch-diameter glass (such as a juice glass) or a sharp knife, cut a hole in the center of each bread slice. Press the cheese evenly onto 4 bread slices around the hole. Place the remaining 4 bread slices on top, buttered side up.
  • Heat a large nonstick skillet over a medium-low heat for 2 minutes. Put the sandwiches in the skillet, cover, and cook for 2 to 3 minutes, or until the undersides turn golden brown. Turn the sandwiches and, working quickly, separate 1 egg into a small cup, allowing the egg white to drip into the cup. Pour the yolk into the hole in the bread and then the egg white over it. Sprinkle with salt and pepper to taste. Repeat with remaining eggs and sandwiches.
  • Cover and cook for 2 to 3 minutes, or until the undersides are golden brown, and the yolks have begun to set (the egg whites won't have cooked through yet). Carefully turn the sandwiches again (some of the egg white may run off). Cover and cook for 1 to 3 minutes, depending on how you like your eggs. Cut the sandwiches in half diagonally and serve immediately.
