CHAROSET

This Gluten-Free Charoset Recipe is one of my favorite Passover foods. During the Seder, this sweet, fruity dish holds a special, symbolic place, reminding us of the mortar which the Jews used to bond bricks while enslaved in Egypt. View the full recipe and more like it at www.elanaspantry.com!

Steps:

  • In food processor, combine apples, walnuts, cinnamon, orange juice, lemon juice and currants.
  • Pulse briefly until desired texture is achieved.
  • Serve.

2 apples, peeled, cored and cut into cubes
2 cups walnuts, chopped
1 teaspoon cinnamon
1/2 cup orange juice, freshly squeezed
1 tablespoon lemon juice, freshly squeezed
3/4 cup currants

EGYPTIAN CHAROSET

Charoset is used at the Passover seder. This recipe originally is found in the "Passover Cookery" cookbook. Cooking time is an estimate.

Steps:

  • Over low heat, simmer dates, raisins, wine and enough water to cover.
  • Stir occasionally until dates are mushy and thicken into a paste.
  • Spoon into a bowl.
  • Sprinkle with almonds.

TROPICAL CHAROSET

Steps:

  • Combine all ingredients in food processor and purée. Transfer mixture to large saucepan and simmer over low heat, stirring frequently, until thickened, about 15 to 20 minutes. Cool completely, then chill, covered, until cold. Serve with matzoh or corn tortillas.
  • Tip:
  • Canela, also called true, Mexican, Ceylon, or Sri Lanka cinnamon, is a less pungent variety than the cassia cinnamon commonly used in the U.S. It's available at www.adrianascaravan.com.

1 pear, peeled, cored, and chopped

3 bananas, peeled and mashed
2 cups pitted dates (about 1 lb)
2 cups sliced or slivered almonds (about 8 oz)
2 tablespoons ground canela (see Tips, below)
1 cup sweet red wine, such as Manischewitz Extra Heavy Malaga, plus additional if needed
