ELDERBERRY FRITTERS
A lovely way to use elderberry flowers! Elderberries havve white flowers and puple-black or red berries. Elderberries are among the most plentiful, useful, and healthful of wild fruits.

Steps:
- Dip washed and drained flower clusters into a batter made by beating next 5 ingredients together.
- Fry dipped clusters in oil (375*F. on frying thermometer) for 4 minutes, or until they are golden brown.
- Drain on absorbent paper.
- Roll in additional granulated sugar.
- Serve hot.
- Makes 4 servings.

ELDERFLOWER FRITTERS WITH HONEY
Lightly fried, golden and crunchy, drizzle these delicately battered elderflowers with orange blossom honey for a dessert with a difference

Steps:
- Cut away any elderflower stalks, just leaving the head still joined together. Half-fill a large saucepan with oil and set over a medium heat - you want it to reach 180C on a temperature probe.
- While the oil is heating, mix together the flours, sugar and a pinch of salt in a bowl. Beat together the egg and sparkling water. Make a well in the centre of the flour, then slowly pour in the wet mixture, whisking until combined - you want it to be lumpy. You'll need to use the batter immediately.
- Dip the elderflower heads into the batter, then drop into the hot oil, a few at a time. Cook for 30 secs-1 min until golden, then remove using a slotted spoon and drain on kitchen paper. Dust generously with icing sugar and drizzle over some honey. Eat straight away, while crisp.

Steps:
- Gather 32 elderberry blossoms with stems.
- Wash Carefully.
- Dry on towel.
- Heat oil about 1 inch deep in skillet.
- Sift dry ingredients together.
- Beat egg and milk.
- Add to flour mixture.
- Dip Blossoms into batter.
- Holding by stems.
- Drop into hot oil.
- Fry to golden brown.
- Serve with maple syruo and sausages if desired.

- Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
- Add the remaining 7 Tablespoons of sugar, eggs, butter, vanilla extract, salt, nutmeg, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
- Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. - Pour enough oil into a deep fryer or a large, heavy pot to come up to a depth of 4 inches or so. You can use as little as an inch's worth of oil, but your fritters will be flatter. Turn the heat to medium-high and bring the oil to 350 degrees.
- When the oil is hot, mix all the other ingredients into a large bowl. Make sure there are no lumps. The consistency should be thicker than pancake or beer batter, but not so thick that it will completely hold its shape if scooped. If it is too thin, add flour. Too thick, add more beer, champagne or seltzer.
- Drop about a tablespoon of batter into the hot oil for each fritter. It is important not to crowd them, so you'll have to cook the fritters in batches. After about 30 seconds or so, if the fritters have not floated to the surface of the hot oil, use a chopstick or butter knife to dislodge them from the bottom of the fryer or pot. Fry until golden brown on both sides, about 5 minutes.
- Drain on paper towels as you cook the rest of the fritters. When they are cooled a bit, dust with confectioner's sugar.
