ESPINACA DIP (FABULOUS APPETIZER)

This Espinaca Dip resembles the one at Jose Peppers, but most people have told me it is much better. You can decide for yourself. This is so easy and doesn't take much time out of your day. It is great for office parties too.

Espinaca Dip (Fabulous Appetizer) image

Steps:

  • This is best cooked in a crock pot.
  • Mix all ingredients in the crock pot.
  • Stir occasionally.
  • For better taste and if you have time, mix the whipping cream, Rotel, jalapeno's, spinach, bouillon cubes, milk and chopped onion together in a sealed container and put in the refrigerator the night before you want to prepare it.

16 ounces Philadelphia Cream Cheese
1/2 pint heavy whipping cream
2 (4 ounce) cans Rotel diced tomatoes, drained
1/4 cup jalapeno
8 ounces frozen chopped spinach
4 chicken bouillon cubes
8 ounces Velveeta cheese
1/2 cup milk
1/2 onion, chopped

Best Spinach Dip Ever image

Steps:

  • In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
  • Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

SPINACH CON QUESO

Styled after a similar appetizer at The Blue Moose in East Grand Forks, Minnesota, this is a very addicting creamy appetizer that goes well with tortilla chips. It has a little kick, but not enough to make your eyes water. Of course, for the heat lovers, you can kick it up a notch if desired. This has become an instant family-favorite and one of my most requested appetizers.

Spinach Con Queso image

Steps:

  • Heat olive oil and butter together in a 3-quart saucepan over medium heat; cook and stir onion until translucent, about 10 minutes. Add garlic and cook until fragrant, about 1 minute. Stir red bell pepper and jalapeno pepper into onion mixture; cook until softened, about 5 minutes.
  • Reduce heat to low and mix pepperjack cheese and spinach into onion mixture; cook, stirring constantly, until cheese is melted and mixture is thick, 5 to 10 minutes. Slowly pour enough evaporated milk into cheese mixture, stirring constantly, until desired consistency is reached; season with salt. Continue to cook and stir over low heat until warmed through, at least 5 minutes more.

  • Mix all ingredients in a crock pot. Stir occasionally. For better taste and if you have time, mix cream, Rotel, jalapeno's, spinach, bouillon cubes, milk and onion together in a sealed container and put into refrigerator for several hours or overnight to let flavors meld. Enjoy!

Steps:

  • 1.Mix all of the ingredients, except for the sour cream, in a large bowl.
  • 2.Microwave on low heat, stirring often, until the cheese melts and the mixture is smooth.
  • 3.7-10 minutes before serving, stir in the sour cream.

  • Snip a small corner of the bag of frozen spinach. Place onto a plate and microwave (still in the bag) 3 minutes to thaw. Spinach should still be bright green. Pour into a strainer and mash with a spoon to get as much liquid out as you can. Set aside.
  • Sauté bacon pieces in a medium skillet until crispy. Remove the bacon and pour off all but a tablespoon of grease.
  • Sauté mushrooms in the same skillet. When brown, add chipotle, onion, bell pepper, and garlic, cooking until vegetables are softened. Season with salt.
  • Over low heat, add cream cheese and processed cheese to the veggies. Stir to melt and combine.
