Steps:
- Toast the allspice, cinnamon, nutmeg and a pinch of salt in a medium saucepan over a medium heat until fragrant, about 2 minutes. Add the chicken stock and bring to a simmer. Place the couscous in a medium bowl. Pour the seasoned stock over the couscous and add the raisins. Gently stir to combine, then cover with plastic wrap and allow to sit until the stock is absorbed and the couscous is fluffy, 10 to 15 minutes.
- Meanwhile, heat the olive oil in a large saute pan over a medium heat and cook the onions until translucent, stirring often, about 8 minutes. Add the garlic and cook for 2 more minutes. Season with salt and pepper.
- Add the mushrooms and cook until softened and caramelized, 5 minutes. Add the Swiss chard and continue to cook until it is fully wilted, 3 to 5 minutes. Taste and adjust the seasoning as needed.
- Toss the Swiss chard mixture into the couscous along with about half of the parsley, then stir. Top with the remaining parsley and serve warm.

This combination of pecans, cranberries and couscous has the feel and flavor of a classic autumn side dish without the heaviness. It can also be made a day in advance.

Steps:
- Put the couscous in a small pot and add 1 1/2 cups water and a pinch of salt. Bring the water to a boil, then cover and remove from the heat. Let steep for at least 10 minutes, or up to 20.
- Put the slightly cooled couscous in a large salad bowl along with the carrots, pecans, cranberries, scallions, oil and lemon zest and juice, and sprinkle with the spices and salt and pepper. Use 2 big forks to combine, fluffing the couscous and tossing gently to separate the grains. (The salad can be made up to this point and refrigerated for up to a day; bring to room temperature before proceeding.)
- Stir in the parsley and sage. Taste and adjust the seasoning, moisten with a little more oil and lemon juice as you like, and serve.

- Put 1 cup of broth (or water) in a sauce pan. Add a small drizzle of extra virgin olive oil and a pinch of kosher salt. Bring water to a boil.
- This is an optional step but can really make a difference in imparting flavor. Heat a little bit of extra virgin olive oil (about 1 to 2 tablespoon) in a non-stick skillet. Add the uncooked couscous and toss around, constantly, using a wooden spoon. You're looking for the couscous to gain a beautiful golden brown color (watch the couscous carefully, this will be quick).u003cimg alt=u0022Toasted couscous in skilletu0022 src=u0022https://www.themediterraneandish.com/wp-content/uploads/2020/04/how-to-cook-couscous-recipe-4.jpgu0022/u003e
- Stir the toasted couscous in the boiling water. Cover the sauce pan and remove from heat or turn the heat off immediately. Let the couscous sit undisturbed for about 10 minutes until it has absorbed all the water. Uncover and fluff with a fork. Taste and adjust salt to your liking.u003cimg alt=u0022Cooked couscous in saucepanu0022 src=u0022https://www.themediterraneandish.com/wp-content/uploads/2020/04/how-to-cook-couscous-recipe-6.jpgu0022/u003e
- You can absolutely serve your couscous plain at this point. Or, feel free to add a little seasoning of your choice and some fresh herbs. I added a pinch of ground cumin, chopped parsley, dill, and green onions. I also added a couple of garlic cloves that have been minced and sauteed in extra virgin olive oil. u003cbr/u003eOnce you add the flavor makers of your choice, give the couscous another toss to combine, and transfer to a serving platter. Enjoy! u003cimg alt=u0022couscous with fresh herbs and scallionsu0022 src=u0022https://www.themediterraneandish.com/wp-content/uploads/2020/04/how-to-cook-couscous-recipe-7.jpgu0022/u003e
