- In a small bowl, combine cream cheese and 3 tablespoons salsa; spread into an ungreased 9-in. pie plate. Combine cocktail sauce and remaining salsa; spread over cream cheese. , Arrange shrimp evenly over top. Sprinkle with olives. Combine cheeses; sprinkle over top. Add onions. Chill. Serve with tortilla chips.

- Spread cream cheese mixture in the bottom of an 8-inch pie plate to create the first layer. Top evenly with cocktail sauce, imitation crab, shrimp, green onion, diced tomato, and mozzarella cheese to create remaining layers. Garnish with small whole shrimp, sliced green onion, and fresh parsley, if desired.
- Cover and chill for a minimum of 2 hours, or overnight, to allow flavors to meld.

FESTIVE LAYERED SHRIMP DIP
The original version of this tasty recipe came from the Mobile Register newspaper, but has been changed slightly by the friend who brought it to my house for a Thanksgiving appetizer and now by myself. Serving in a deep-dish pie plate works well. Serve with Frito Scoops. Gobbled up by guests at a recent Christmas party. Prep time assumes having to peel and devein fresh shrimp. Tedious, but I never buy frozen. Cooking time noted is for the shrimpies...don't overcook! Don't add to the pot until the water is boiling. When you take them out of the pot dunk in cold water to stop the cooking process and prevent them from getting tough. Enjoy!

- In medium bowl, mix cream cheese, lemon pepper, Worcestershire sauce, mayo or yogurt and lemon juice until smooth; spread evenly over bottom of the pie plate.
- In a small bowl, mix the horseradish into the cocktail sauce; spread evenly over cream cheese mixture.
- Evenly distribute the shrimp over the cocktail sauce.
- Top with the two cheeses.

- Preheat oven to 425 degrees F and place rack on top 3rd of the oven. Melt butter in an 8-inch cast iron skillet or oven safe pan. Saute garlic and onion until soft, about 2-3 minutes. Add shrimp, chili flakes and salt. Cook until shrimp turns pink, about 1-2 minutes. Add white wine and cook at a simmer until about 1 tablespoon liquid remains.
- Remove from heat and stir in cream cheese, sour cream, mayonnaise, mozzarella cheese, 1/4 cup parmesan cheese, 2 tablespoons parsley and salt to taste. Top with remaining 1/4 cup parmesan cheese and place skillet into oven.
- Bake for 18-20 minutes until cheese is bubbling. Increase heat to broil and cook until the top is browning in spots, about 3-5 minutes more. Remove from oven and top with 1 tablespoon chopped parsley.
- Let rest 5 minutes before serving with toast or crackers and vegetable crudite.

This is a wonderful party dip. I usually use it around the Christmas holidays, but you can use it anytime. It is EXTREMELY easy to make and can be made ahead of time.
