Steps:

  • Peel 4 medium beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet. Roast at 450 degrees F, stirring once or twice, until tender, 35 minutes. Transfer to a bowl; toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta.

Steps:

  • Preheat oven to 400 degrees.
  • Peel beets, cut in half, and slice into 1/4" thick slices.
  • Place in large baking dish with garlic, lemon zest, lemon juice, olive oil, and season with salt and pepper.
  • Tightly cover dish with foil, place into oven, and bake for 35-40 minutes, until beets are fork tender.
  • Remove from oven, place on serving platter, and top with fresh thyme and feta. Serve and enjoy!

Steps:

  • Bring a pot of water to a boil, and cook the beets 25 minutes, or until tender. Cool, peel, and slice 1/3 inch thick. Place slices in a bowl with the tarragon vinegar, and marinate 15 minutes.
  • Place a few beet slices on a microwave-safe dish, reserving vinegar. Sprinkle beets with some of the reserved vinegar, lemon juice, feta cheese, and walnuts. Top with more beet slices, and sprinkle again with vinegar, lemon juice, feta, and walnuts. Repeat, building the stacks as high as you like.
  • Place stacks in the microwave, and cook 40 to 60 seconds on Medium. Cool slightly before serving.

Steps:

  • Preheat broiler.
  • In a medium skillet cook onion and garlic in olive oil and sesame oil over medium heat for 4 to 5 minutes or until onion is tender.
  • Remove from heat.
  • Add cream cheese and feta cheese; stir until mixture is nearly smooth.
  • Stir in olives, sweet peppers, and dillweed. Set aside.
  • Using a long serrated knife, split pita rounds in half horizontally to form two circles.
  • Place, cut side up, on a large ungreased baking sheet.
  • Broil 3 inches from heat for 1 minute or until pita rounds are lightly toasted.
  • Spread each pita round with about 1/3 cup of the cheese mixture.
  • Broil about 1 minute more or until hot.
  • To serve, use a sharp knife or kitchen scissors to cut each round into 6 wedges.

Not too bad. A bit too vinegary, so I think I'd use less or marinate less. Bf wasn't impressed with the walnuts or feta, although I did like it that way. I think I'd forego stacking it though. A little time consuming and it's not the prettiest bc of all the beet juice, so I think I'd just mix it all together and call it a salad. Thanks for the recipe!
