- Place the first 13 ingredients in a blender. Cover and process until pureed., In a small bowl, mix ginger, lime juice, oil, salt and pepper. Rub over flesh side of salmon fillets., Lightly oil the grill rack. Place salmon on rack, skin side down. Grill, covered, over medium-high heat 10-12 minutes or until fish just begins to flake easily with a fork. Serve with sauce.

DAD'S POACHED SALMON WITH CUCUMBER SAUCE
Steps:
- Combine all poaching liquid ingredients in a medium saucepan. Bring the poaching liquid to a very low simmer and cook 30 minutes. Skim the top as needed to remove any foam from the surface. Lay some cheesecloth over the top of the poaching liquid, making a bed for the fillets. Submerge salmon in poaching liquid and cook for 8 to 10 minutes.
- 1 English cucumber, unpeeled, roughly chopped
- Fronds from 1 bunch dill (about 1 cup)
- 1/2 small red onion
- 2 large lemons, juiced
- 1/3 cup mayonnaise
- 2 tablespoons extra-virgin olive oil
- 1/3 cup yogurt
- Salt and freshly ground black pepper
- Combine first four ingredients in a blender and puree. Gradually blend in mayonnaise, oil and yogurt and then season, to taste, with salt and pepper.
- Serve poached salmon with side of sauce.
QUICK POACHED SALMON WITH CUCUMBER SAUCE

- In a large skillet, combine the water, wine, onions and peppercorns. Bring to a boil. Reduce heat; carefully add salmon. LEMON-PEPPER FRESH FLOUNDER FILLETS

- Place bran cereal in a blender; blend until pulverized. Transfer to a shallow bowl and mix in lemon-pepper seasoning.
- Heat oil in a deep skillet over medium heat to 350 degrees F (175 degrees C).
- Place flour in a medium bowl. Whisk egg and milk together in another medium bowl. Dredge a flounder fillet in flour; shake off excess. Dip into egg mixture. - In a large resealable plastic bag, combine the first five ingredients; add salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally. - 1. In a 2-cup microwavable measuring cup or bowl, place cucumber, green onion and butter. Microwave, uncovered, at 100% power (700 watts) for 2 minutes or until cucumber is tender.2. Stir in flour. Add heavy cream and stir until blended. Microwave, uncovered, at 100% power for 2 minutes or until mixture comes to a boil. Stir in mayonnaise, 1/2 teaspoon dill weed, 1/4 teaspoon salt and dash of pepper cover and set aside.3. Cut fish into serving-size pieces. Place fish in a 12 x 8 x 2-inch microwavable dish with thickest portions toward outer edge of dish, tucking thin ends under for even thickness. Sprinkle with lemon juice. Cover with plastic wrap, turning one corner back. Microwave at 100% power for 6 to 8 minutes or until fish flakes easily, rotating dish one-half turn after 3 minutes. Let stand for 3 minutes.4. - Combine first 6 ingredients in saucepan and bring to a boil, stirring so the sugar dissolves.
- Turn off heat and set aside for about 5 minutes.
- Slice vegetables and place in large mixing bowl.
- Pour vinegar mixture over veggies and toss a bit.
- Layer in a large flat dish (I use my Pyrex 13 by 9 pan) that has a tight fiting lid.
- Refrigerate, covered, for at least one whole day (but a couple days is even better).
- Stir every 6 hours or so to be sure all cucumbers get marinaded.
- Serve chilled as a salad or as a delicious edible garnish.
FILLETS OF MONKFISH WITH MUSTARD CUCUMBER SAUCE (GIDLEIGH PARK)

- Boil heavy cream rapidly until it is reduced by half.
- Combine the shallots and wine in heavy-bottomed pan and cook over high heat to reduce. Add fish stock and reduce by half.
- Cut cucumber into strips 1 1/2 inches by 1/8 inch, cutting around the seeds. Do not peel.
- Add the reduced cream to the reduced stock and reduce again slowly until mixture is thick enough to coat spoon.
- Heat oil in skillet and season fish with salt and white pepper. Saute fish over high heat about 1 1/2 minutes on each side, until lightly golden. Reduce heat and add butter and a few drops of lemon juice. Stir in mustards. Add cucumber strips to the sauce and simmer 2 to 3 minutes.
- Using a slotted spoon, pile a little cucumber into the center of each plate and pour the rest of the sauce around. Top with fish and decorate with small sprigs of dill.
