- In a large skillet coated with cooking spray, saute the cabbage, carrot and onions until for 7 minutes or crisp-tender. Transfer to a greased shallow 1-qt. baking dish. , In a bowl, combine the egg, milk, Swiss cheese and seasoned salt. Pour over the vegetables. Sprinkle with parsley and Parmesan cheese. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.

SCALLOPED CABBAGE WITH HAM AND CHEESE
A cheesy scalloped cabbage and ham casserole. Great for potlucks. A bag of slaw can be substituted for the cabbage.

- Preheat oven to 300 degrees F (150 degrees C).
- Steam cabbage and onion in a small amount of water until tender. Add the ham. Place into a buttered baking dish.
- In a skillet, melt butter over low heat. Stir in flour until smooth. Add milk, stirring until smooth. Add salt, cheese and stir until melted. Pour over the cabbage mixture. Sprinkle with bread crumbs and dot with butter. Bake for 30 minutes.

FRENCH CABBAGE AND HAM GRATIN
This dish is very typical of southern France. Adapted from a recipe by Stephanie Alexander. After we made duck stew, we used the rendered duck fat for this recipe and it turned out well. Dont forget to scatter the salt and pepper as you go along.

Steps:
- Preheat oven to 200°C/400°F.
- Bring a large saucepan of lightly salted water to a boil.
- Separate cabbage leaves and blanch for 5 minutes in the boiling water.
- Drain and squeeze hard in a clean cloth.
- Rub duck fat on the bottom and sides of a gratin dish.
- Layer the dish with 1/3 of the cabbage, 1/3 of the creme fraiche, 1/3 of the cheese and half the ham, adding pepper and a little salt as you go along (remember ham has salt already).
- Repeat the layers once, then cover with a last layer of cabbage and finish with the rest of the cheese and creme fraiche.
- Scatter with the breadcrumbs and drizzle with the remaining duck fat.
- Place the gratin dish on top of a baking tray to catch overflow and bake for 25 minutes until crust is golden and the gratin is bubbling at the edges.
- To serve, cut the layers with a sharp spoon.
CHICORY AND PARMA HAM GRATIN
From a book called Deliciously Different, this would make a lovely side dish, although the description designates it as the main entree, served with new potatoes and a simple side salad. The recipe does not specify how to prepare the chicory, so feel free to leave it whole or perhaps slice in half lengthwise prior to boiling.

- Grease a baking dish and set aside.
- Boil the chicory in salted water for 5 minutes. Drain, cover with cold water and simmer for a further 12-15 minutes until tender, then drain.
- Preheat the oven to 190C/375°F.
- Grate the cheese and slice the ham thinly.
- Melt the butter over low to medium heat in a heavy pan and gradually stir in the flour to form a roux. Stir for 1-2 minutes to allow flour to cook.
- Add the milk slowly, stirring until the sauce thickens.
- Season to taste and simmer for 5 minutes over low heat.
- Add the cream and simmer for a further 3-4 minutes.
- Add half the cheese to the sauce, stir to incorporate the cheese, then season to taste.
- Drizzle about 3-4 tablespoons of the cheese sauce over the bottom of the baking dish.
- Arrange the chicory in the dish then cover with the slices of ham.
- Spoon over the remaining sauce and sprinkle the cheese over top.
- Bake 20-25 minutes until golden brown and bubbly.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Spread out chopped ham on the bottom of the prepared dish.
- Set hash browns on a microwave-safe plate and microwave on high power for 1 minute and 30 seconds. Potatoes should be thawed and feel slightly warm to the touch, but not be cooked. Set aside.
- Melt 2 tablespoons butter in a large skillet over medium heat and cook onions until they are just starting to turn clear, 2 to 3 minutes. Add chopped cabbage and continue to cook, stirring often, until cabbage wilts down a little but is still crisp, 3 to 5 minutes. Stir in shredded raw carrots and microwaved hash browns, then add mixture to the baking dish.
- Wipe out the skillet and melt the remaining 3 tablespoons butter over medium heat. Combine all-purpose flour, salt, dry mustard, and white pepper in a small bowl. Sprinkle flour and seasonings over the melted butter and stir, constantly, until flour and butter are well mixed and the mixture is bubbly, about 3 minutes. Allow to bubble for 1 minute, while stirring.
- Gradually pour in milk, stirring constantly to avoid lumps. Cook, stirring, until the mixture boils and thickens, 3 to 5 minutes. If the mixture is too thick, stir in an additional 3 to 4 tablespoons milk. Remove from heat.
- Add half of the grated Cheddar cheese and stir until it is melted, then add the remaining half and repeat.
- Pour sauce over the casserole and top with crumbled bacon and cracker crumbs.
- Bake in the preheated oven until the top is bubbly and brown, 30 to 35 minutes. Serve warm.

- Preheat the oven to 300 degrees F (150 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, about 7 minutes. Drain and transfer noodles to a large bowl.
- At the same time, melt butter in a large pan over medium-high heat. Add onion and saute until softened, 5 minutes. Add ham; cook and stir until lightly browned, about 3 minutes. Stir in cabbage and carrots and saute until slightly softened, 3 to 5 minutes. Add mixture to the egg noodles.
- Mix condensed soup, water, and sour cream together in a bowl until well blended. Pour over egg noodles and ham mixture and stir until well combined. Pour mixture into a 9x13-inch casserole dish and cover tightly with foil.

- Heat the milk in a small saucepan until scalding.
- Take off heat.
- In a saucepan, melt 4 tlbsps butter over moderately-low heat and saute the onion and garlic for 3-4 minutes. Add the flour and cook the roux, stirring, for 3 minutes more.
- Add the heated milk in a stream, whisking, and simmer it, stirring, for 5 minutes.
- Remove from heat and stir in the cheeses and season to taste.
- Keep stirring just until the cheeses are melted and incorporated into the sauce.
- In a well-buttered 14 inch gratin dish, combine the broccoli and ham and pour sauce over.
- Sprinkle breadcrumbs over top, dot with remaining 2 tblsps butter and bake in a preheated 375F (190C) oven for 30 minutes, or until it is browned and bubbly.
