Fiery Angel Hair Pasta image

Steps:

  • Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
  • Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
  • Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
  • Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.
  • Yield: 2 cups

Angel Hair with Fresh Tomato Sauce image

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the tomatoes in a large bowl. Heat the olive oil and garlic in a small saucepan over medium heat until the garlic is translucent, but not at all browned, 1 to 2 minutes. Stir in the crushed red pepper flakes, then pour the garlic oil over the tomatoes. Add 1 teaspoon salt and toss to coat.
  • Cook the pasta according to package directions. Transfer the pasta directly from the boiling water to the bowl with the tomatoes using a pasta fork or tongs. Sprinkle in the Parmesan and some of the basil and toss to coat; let stand 5 minutes so that the sauce absorbs slightly. Top with the remaining basil and a little additional olive oil and serve with additional Parmesan.

  • Cook pasta in boiling water for 3-5 minutes (depending on your taste).
  • Drain.
  • In a small saucepan, heat olive oil until warm.

Steps:

  • Cut the tomatoes into fine julienne and place them, along with the sugar in a small bowl. Pour in just enough hot water to cover. Set aside to hydrate until soft, about 30 minutes. Drain well, squeezing out excess liquid. You may skip this step if you choose oil packed or pre-marinated sun-dried tomatoes. Bring a large pot of water to a boil and add good amount of salt. Add the pasta and cook until al dente, according to package instructions. Retain some of the pasta water for the sauce. Make the sauce: Heat the olive oil in a large saute pan over medium-high heat until hot. Add the garlic and shallots; saute briefly until lightly colored. Add the oregano, corn, balsamic and about 1 cup of the pasta cooking water. Cook, uncovered, until the corn is just tender, about 2 minutes. Turn off the heat and add the tomatoes, half of the Parmesan, and 1 tablespoon of the parsley and toss well. Toss with more of the reserved cooking water, if necessary, to moisten. Pour the pasta into a warmed serving bowl, dust with a little more Parmesan, and scatter the remaining parsley on top, and give it a good grind of pepper. Pass the remaining Parmesan at the table. Serve immediately.

Steps:

  • Mince garlic and mash to a paste with a pinch of salt using a large heavy knife.
  • Core and coarsely chop two thirds of tomatoes. Halve remaining tomatoes crosswise, then rub cut sides of tomatoes against large holes of a box grater set in a large bowl, reserving pulp and discarding skin. Toss pulp with chopped tomatoes, garlic paste, lemon juice, salt, sugar (if using), and pepper. Let stand until ready to use, at least 10 minutes.
