MARINATED TOMATO SALAD WITH HERBS

Steps:
- Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl. Lop off the tops of the green onions, then slice the white and mostly light green parts really thin. Add to the tomatoes.
- Add the olive oil, balsamic vinegar, brown sugar, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
- Add the herbs and gently toss to combine. Cover and refrigerate for a couple of hours before serving.

SIMPLE TOMATO HERB SALAD
This is a basic tomato salad that's great with just about any summer meal. I must say all these measurements are a bit of a guess. I don't measure anything, but just drizzle the olive oil and vinegar in until it "looks right" and tastes good too! You need really fresh, juicy flavourful tomatoes to make this salad work. A bit of feta cheese is a nice addition.

- Preheat the oven to 350°. Spread the pistachios on a rimmed baking sheet and toast in the oven for about 8 minutes, or until lightly browned; let cool.

- Divide herbs, greens, green onions and tomatoes between two plates. Season with a generous pinch of flaky sea salt, and a grind of two of black pepper.
