FRESH HOMEMADE SALSA
Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

- Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

- Mix together the tomato, jalapeno pepper, red onion, green onion, garlic, cilantro, lime juice, lemon juice, cumin, jicama, and the diced tomatoes with chilies in a bowl. Season with salt and pepper. Allow to sit at least 1 hour before serving.

QUICK-ROASTED SALSA

- Preheat the oven to 450 degrees F.
- Place the tomatoes, garlic, onion, jalapeno and poblano onto a baking sheet. Drizzle with the olive oil and season with salt and pepper. Roast until charred in spots, about 15 minutes. Set aside and allow to cool slightly, about 5 minutes.
- Transfer the roasted vegetables to a blender. Add the lime zest and juice and puree until smooth, being careful not to fill the blender too full. Transfer to a bowl and stir in the cilantro. Taste and adjust the seasoning if needed. Goes great with chips or alongside enchiladas.

- Using a blender or food processor, add equal amounts of each vegetable and using pulse, process just until it is still chunky.
- Drain, reserving liquid.
- Repeat until all vegetables have been processed.
- Mix drained salsa, adding sugar, cilantro and salt. Add some of drained liquid to make it desired thickness.
- If it is too spicy, add more tomatoes.
- Refrigerate in glass container and use on tortilla chips, tacos, scrambled eggs, or as a relish.
- Will keep for up to one week.

EASY "FRESH" SALSA
I asked for this recipe at a party 20 years ago, and I've been making it ever since! I always feel a little guilty when people ask for the recipe, because it's so easy!!! The addition of the cilantro makes it great, and fresh tasting. Don't use regular stewed tomatoes; it just won't taste nearly as good.

MY RESTAURANT-STYLE SALSA-SMALL BATCH
This recipe is adapted from The Pioneer Woman's blog recipe. Everyone who has tried this salsa absolutely loves it. It is close to my Enough For A Superbowl Party Salsa only a much smaller amount. I think that this would make a great Mexican Gazpacho recipe for summertime. I have found that Hunts brand tomatoes is the best for this recipe. There really is a difference in flavor of brands. - Pour the tomatoes, Rotel, green onions and cilantro into an 7-cup food processor (or make in half batches and combine when done). Pulse the mixture about 15 times.
- Add garlic, jalapeno (if using), sugar, salt and cumin.Pulse until the consistency that you like. I pulse about 10 mores times.
- Pour into a jar or airtight container and refrigerate for at least 4 hours to let the flavors meld (If I am in a rush, I will stick in the freezer for about 30 minutes).
- It will keep for at least a week, and if we haven't used it all by then, which rarely happens, I add it into soup or chili.
FRESH RESTAURANT-STYLE SALSA
This addictive salsa is restaurant quality, or maybe even better! It's fresh and flavorful, not too spicy, and easy to make in a food processor with a mix of ripe and canned Roma tomatoes. This makes a big batch which is good because it will go fast. Serve with lots of thin, crispy tortilla chips and a margarita, of course!

SIMPLE SALSA
There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

- Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
- In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
- Enjoy with chips or add to entrees for flavor/side dip!

This recipe was given to me by a friend. It is easy and fast to whip up for parties or for dinner. And is great for pickey eaters that do not like onions in their salsa. - In a Food processor or blender combine (10oz) Tomatoes and green chilies,Piece of garlic clove,Cilranto with out the stems and salt also add prefered vegetables if youd like.
