FRIED BANANA SPLIT

- For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
- For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
- Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
- An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

- Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
- Leave to rest for one hour.
- Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
- Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.
- Drain quickly on a wire rack or paper towel, and serve warm.
- If you like, serve them with real maple syrup, powdered sugar, or honey, for extra sweetness.

This makes enough for 12 people. You can serve these with your favorite.....honey, maple syrup, powder sugar, melted chocolate or hot fudge!

FRIED BANANA FRITTERS
This is an old traditional snack in most of Malay families, especially when there are too many ripe bananas at the back yard. We used to eat this for breakfast or evening tea. This is a trial an error recipe. You have to keep on trying to do it until you get the right texture and flavour. Once you master it you can do it with your eyes closed. But, it is worth trying since it is a really nice and tasty snack. The ingredients below are flexible. It's up to individual taste. If you like more bananas you have to add less flour and the fritters will be a softer. If you prefer the fritters to be more rounded and spongy use more flour. Either way the batter must look like cake batter before frying. I prefer more flour.

Steps:
- Mix all ingredients and stir with the spoon or your fingers until the mixture becomes slightly thicker than a cake batter.
- Heat oil in deep frying pan over medium flame. Using right hand finger tip, scoop about 1 tbs banana mixture into hot oil (Do it slowly and gently). Try to make it as rounded as possible.
- Fry for 2 to 3 minutes before stir. Cook for another 3 to 5 minutes or until the colour turn slightly dark.
- Serve hot with a cup of tea of coffee.

This is not really a recipe. My grandmother used to prepare this for me when I was little, and I loved it! This is not dairy free suitable, you have to use butter because that's what makes the unique flavor.

- Peel banana and cut in half lengthwise.
- Heat butter in a non stick skillet until slightly bubbly but not brown.
- Place banana halves in the hot butter and fry for about two minutes, then carefully turn and fry other side for about two minutes, too.
- The banana halves should be slightly browned, so fry a little longer if they aren't browned after those 2x2 minutes.
- Serve hot, sprinkle with some cinnamon if you wish (I never did).

- In a mixing bowl, gently toss the bananas with egg to moisten, then lightly roll the bananas in the breadcrumbs.
- In a large skillet, melt the butter over medium heat.
- When the foam goes away, add the bananas and fry on all sides until golden.

FRIED CHOCOLATE BANANAS

- Preheat the fryer. Spread 1 tablespoon of the melted chocolate over each wonton, leaving a 1/2 inch border. Place the banana on the bottom edge of each wonton. Lightly wet the edges of each wonton with the butter. Fold in the ends toward the center about 1/4-inch. Then, beginning at the bottom, roll up the wonton securely, pressing to close. FRIED BANANAS WITH LAVENDER HONEY AND FIVE-SPICE CHOCOLATE

- Stir the chocolate syrup and 5-spice powder together and set aside.
- In a deep fryer or large heavy saute pan with deep sides, heat the oil to 375 degrees F.
- In a large mixing bowl, combine the flour, cornstarch, and baking powder. Add the seltzer water in a stream while whisking constantly. Dip the bananas in the batter to coat and fry until golden brown. Drain on paper towels and sift the powdered sugar over the top immediately.
- Place 2 banana pieces on a serving plate and drizzle chocolate sauce over. Top with a drizzle of honey.
- Top with a spoonful of creme fraiche. Grate chocolate over top. Garnish with a small sprig of mint.

- Meanwhile, to prepare the sauce, combine milk, sugar, rum and coconut in a saucepan and bring to boil for 2 minutes. Spoon sauce on a plate. Place two quarters of bananas on the plate, round side up, and garnish with a sprig of mint.

- Heat oil to 375°F in a Dutch oven or deep fryer.
- Mix corn flour and sugar in a bowl. Add butter, egg, salt, rum, and milk, stirring until it forms a thick batter.
- Peel bananas, and cut into quarters. Mix cinnamon with brown sugar. Sprinkle half the cinnamon/ brown sugar mixture on the banana quarters.
- Roll banana quarters in the batter, and drop carefully into the hot oil, a few at a time. Fry 2 - 3 minutes on each side, turning once, until golden brown.
- Drain fried bananas on paper towels and dust with remaining cinnamon/brown sugar mixture.
- Continue until all banana quarters are fried and dusted. Serve warm.
