FRIED CHICKEN SALAD
You'll make it your business to have leftover fried chicken, just so you can make this creamy and tangy salad the next day.

Steps:
- Remove and discard the bones from the chicken. Chop up the meat, with the fried skin, into small pieces (you should have about 6 cups).
- Set aside 1 tablespoon each of the celery, scallions and pickle.
- Whisk together the mayonnaise, pickle brine, buttermilk, yellow mustard and a couple dashes hot sauce in a large bowl. Stir in the remaining celery, scallion and pickle.
- Add the chopped chicken to the bowl and stir gently to combine. Season with salt and more hot sauce if you'd like. Transfer to a large serving bowl and sprinkle with the reserved celery, scallion and pickle. Serve on potato rolls with a few dashes of hot sauce.
FRIED CHICKEN TENDERS
These are tasty, tender chicken pieces with our own spicy horseradish dipping sauce. We serve it with our favorite potato salad and corn on the cob. Enjoy!

- Place flour in a shallow bowl. Place breadcrumbs in a separate shallow bowl, and mix with ground black pepper and cayenne pepper. Place eggs and water in a small bowl.
- One piece at a time, coat the chicken in the flour, the eggs and the bread crumbs, and set aside.
- Heat oil in a deep fryer to 375 degrees F (190 degrees C).
- In small batches, fry chicken 6 to 8 minutes, or until golden brown. Remove chicken, and drain on paper towels.
- In a separate small bowl, combine the mayonnaise, horseradish, sour cream, Worcestershire sauce and mustard. Mix well, and serve with the chicken for dipping.

FRIED CHICKEN SALAD
I started making this salad for an easy lunch or dinner years ago after having one something like it at a restaurant named Grady's that is now closed. Adults and kids love it.

Steps:
- Boil eggs and let them cool.
- Bake chicken tenders according to directions on package(I have also used leftover chicken in this).
- Tear or prepare lettuce as normal.
- Add cheese, tomato, and cucumber to lettuce.
- Cut chicken into bite size pieces and put into lettuce mixture.
- Dice eggs and add into mixture.
- Mix together ranch dressing and barbeque sauce(I use more than above since we love this dressing) and pour desired amount over salad.
- I do individual salads with this instead of mixing all together. The chicken tends to sink to the bottom.
- You can add whatever other veggies you want to it but my kids won't eat onions, peppers, etc so I skip them.
CRISPY CHICKEN STRIPS WITH SALAD

- Make the sauce: Mix the mayonnaise, 1 tablespoon dill, 2 teaspoons mustard powder, the lemon juice and 1 tablespoon water in a small bowl. Season with salt and pepper. Set aside. Combine the breadcrumbs, cheese, the remaining 1/2 teaspoon mustard powder, 1 teaspoon salt and 1/4 teaspoon pepper in a shallow bowl. Beat the eggs in another shallow bowl. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Dip the chicken strips in the beaten egg and then in the breadcrumb mixture, pressing so the coating sticks. Working in batches, add the chicken to the skillet and cook until golden brown and crisp, about 3 minutes per side, adjusting the heat as needed. Transfer to paper towels to drain. Place the greens in a large bowl and toss with the tomatoes, the remaining dill and 3 tablespoons of the dill-mayonnaise sauce. Season with salt and pepper. Divide the chicken and salad among plates and serve with the remaining sauce for dipping.

FRIED CHICKEN SALAD
Steps:
- Preheat oven to 425 degrees F.
- Line baking sheet with aluminum foil and place popcorn chicken on baking sheet and bake for 8 to 10 minutes. Remove from oven and let cool.
- For dressing:
- Mix together ranch dressing and BBQ seasoning in small bowl and set aside.
- For salad:
- Place lettuce in large bowl. Add dressing and toss with tongs until lettuce is coated. Set aside. Cut each tomato into 8 wedges and the cucumber into 16 slices. Divide lettuce onto 4 cold plates. Arrange each salad with 4 tomato wedges, 4 cucumbers, and 4 baby carrots. Top each salad with 1/4 of the chicken pieces.

- Heat the oil to 375 degrees, about 6/10.
- Wash the chicken in warm water, place on a plate.
- Mix the flour, seasoned salt, garlic powder, and pepper in the medium mixing bowl.
- Beat the eggs into a small bowl.
- Coat each piece of chicken in the flour mixture, then dip it into the egg before coating it in the flour mixture again and placing onto a different plate (TIP: It helps to use one hand to dip in the egg mixture, then the other to move the chicken around in the dry batter to prevent excess clumping of the dry batter).
- Place the chicken into the hot oil carefully, make sure to leave enough space to stir the chicken during cooking.
- Put a couple of layers of paper towels onto the third plate for draining the chicken on.
- Cook the chicken about 10 minutes until it is a light brown, cut the thickest piece in half to make sure it is white all the way through.
- Once all the chicken is cooked, turn the heat on the oil up to medium/high (8/10).
- Put all of the chicken into the oil to crisp the outside, only cook for about 2-3 minutes, or until medium brown.

OVEN FRIED CHICKEN TENDERS WITH CHOPPED SALAD AND VINAIGRETTE
Instead of the same old boring salad with grilled chicken. I made a chopped salad with delicious oven fried chicken tenders. The mayonnaise marinade in this recipe keeps the chicken moist and flavorful. Hope you enjoy!

- Make Vinaigrette:.
- Combine all ingredients in bowl. Wisk well to combine. Refrigerate for at least 1/2 hour to allow flavors to combine.
- Wash Romaine lettuce, tomatoes and cucumbers. Spin a couple of times in salad spinner. Transfer to a Salad bowl. Top with pitted olives and blue cheese. Toss to combine. Add Vinaigrette and toss right before serving.
- Soak Chicken in Water and white vinegar for 10 minutes. Rinse well and pat dry. Transfer chicken to ziploc bag or large bowl.
- In a bowl, mix mayo, garlic, 2 tbs. light adobo, black pepper to taste, lime juice and worcestershire sauce. Mix to combine.
- Add mayo mix to chicken, coat well. Let marinade for at least 1/2 hour to 1 hour on the counter. If longer, refrigerate then bring to room temperature before cooking.
- In ziploc bag or large bowl combine bread crumbs, 1 tbs. light adobo, and black pepper to taste. Mix well.
- Coat the chicken in the bread crumb mixture.
- Preheat oven to 425.
- Grease a baking sheet with cooking spray, place chicken on baking sheet. Drizzle chicken with olive oil.
- Bake for 15 to 17 minutes. Flipping once halfway through cooking time.
- I like to Serve the Chicken Tenders on top of the Chopped Salad.

LEMON-PEPPER FRIED "CHICKEN" TENDERS
Crispy on the outside and tender on the inside, these not-so-chicken tenders satisfy that craving because the tofu is soaked in a "not chicken" broth, yielding an umami flavor. Don't be tempted to skip the pressing of the tofu-that's crucial in removing its liquid so it can soak up that broth.

- For the lemon-pepper "chicken": Place the tofu on a layer of paper towels on a cutting board. Top with more paper towels. Place a pot over the top and fill with heavy cans to press the excess liquid from the tofu. Let stand for 30 minutes.
- Cut the tofu into strips. Soak the strips in the broth in a bowl for 1 hour.
- Meanwhile, make the ranch dip: Stir together the mayonnaise, almond milk, parsley, vinegar, garlic powder, onion powder and dill in a small bowl. Season with salt and pepper. Refrigerate until ready to serve.
- For the lemon-pepper "chicken": Pour enough oil to reach halfway up the sides of a cast-iron skillet. Heat the oil to 350 degrees F. Line a rimmed baking sheet with a wire rack.
- Make the "buttermilk" by stirring together the almond milk and vinegar in a shallow dish. Let stand, whisking occasionally, for 10 minutes to develop a tangy flavor. Combine the flour, cornstarch, lemon-pepper seasoning and salt and pepper to taste in a separate shallow dish.
- Dip the tofu strips in the "buttermilk," then dredge in the flour mixture. Fry, in batches, turning occasionally, 7 to 8 minutes. Drain on a wire rack and sprinkle with additional lemon-pepper seasoning while still hot. Serve hot with the ranch dip.

This chicken salad is made from leftover skinless fried chicken. Everyone in my family loves it so I make sure I make extra chicken so I can make this for the next days sandwiches. Can also use to stuff big red tomatoes. YUMMY!!! :)

This recipe came from my "Where's Mom Now That I Need Her?" cookbook. The recipe calls for one whole fryer chicken, but I usually just use four skinless chicken breasts. This way, I have breading left over for the next time I want to make this dish.

- Preheat oven to 400 degrees.
- While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
- Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
- Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
- Cut chicken into pieces about 1 inch thick.
- Place chicken pieces in paper bag of breading one at a time and shake to coat.
- Place coated pieces in baking dish with melted butter or margarine.
- Bake at 400 degrees for 50 minutes. Reduce heat to 375 and bake for an additional 10 minutes. If using a convection oven (which is what I use) you'll only need to bake the chicken at 400 for about 40 minutes.
- Serve with your favorite dipping sauce (I prefer honey mustard).
