CABBAGE FRUIT SALAD
This salad goes well with all meats-it's especially good at barbecues-and fish. I recently served it at the Prayer Brunch of our local women's club. After 55 years of marriage, I'm a wife, mother, grandmother and great-grandmother doing the things I like to do...and cooking's on top of that list!

- Preheat the oven to 350 degrees F. Spread the nuts in a single layer on an ungreased rimmed baking sheet. Toast for 4 to 6 minutes, until fragrant and crisp. Toss once halfway through and do not walk away during the last few minutes of cooking (TRUST ME). Immediately remove to a small bowl or plate (or if your salad is ready to go, you can add them directly to the serving bowl).
- In a medium mixing bowl or large liquid measuring cup, whisk together the dressing ingredients: rice vinegar, honey, soy sauce, peanut butter, and ginger. Pour enough over the salad to moisten it. Toss to coat. Assess the amount of dressing and add more as desired. Add the almonds and give the salad a final, light toss. If time allows, let marinade for 30 minutes prior to serving. Enjoy!

- Everyday Cabbage Salad. This recipe is just what it says it is: an everyday cabbage salad that goes well with just about anything. It’s a simple mixture of shredded red cabbage, green cabbage, and carrots.
- Asian Cabbage Salad. Asian cabbage salad shares a similar red cabbage, green cabbage, and carrot base as the everyday variety above, but it’s a bit heartier.
- Mediterranean Cabbage Salad. Believe it or not, Mediterranean cabbage salad is even more involved than the first two! It shares many of the same ingredients and contains radishes, fresh dill, green onions, etc.
- Sesame Lime Cabbage Salad. Taking only 15 minutes to make, sesame lime cabbage salad is always a hit at most parties and outdoor get-togethers. It somehow walks the balance between sweetness and tanginess perfectly, and the sesame seeds and fresh veggies give it plenty of crunch.
- KFC Coleslaw. And here’s the cabbage salad recipe many of you have been waiting for – copycat KFC coleslaw. It tastes so good that it’s hard for most people to believe how easy it is to make.
