HOMEMADE GRANOLA BARS (HEALTH OR ENERGY BARS)
No fructose corn syrup. Can make an infinite combination of desired flavors...and better than store-bought, but be aware that these will be a tad softer. The last ingredient should read "white or chocolate chips".

- Preheat the oven to 325. Line a rimmed baking sheet with parchment paper or foil. Combine the oats, wheat germ, flax seeds, sesame seeds and almonds; spread out evenly on the rimmed baking sheet and toast for approximately 10 to 15 minutes until golden, stirring occasionally and watching carefully so as not to burn.
- In the meantime, in a large bowl combine salt, coconut, cinnamon and dried cranberries; set aside.
- In a large measuring cup place the vanilla, honey, butter and brown sugar. Microwave approximately 2 minutes. Mixture will foam and bubble. Stir to completely dissolve brown sugar.
- When oat mixture is done toasting, transfer to the same bowl with coconut mixture and stir to evenly combine. Add the honey mixture and stir to incorporate.
- Line a 9" x 13" baking pan with waxed paper. Spread the mixture, using the back of a wooden spoon, pressing to create a smooth, even surface. Place another piece of waxed paper over the top, pressing down to evenly compact the mixture. Compacting is important so the bars won't fall apart when cut. (Suggestion: place one pan of same size within the other and press to even out mixture.).
- Refrigerate and completely cool the mixture about 2 hours to assure a clean cut. Firmly press down with a large knife to cut into bars. Do not saw. Wrap bars in waxed paper and store in refrigerator or freezer.
FRUITY GRANOLA ENERGY BARS
A Healthy snack to make, and enjoy. Haven't had a chance to make this yet myself. Use your favorite dried fruit, figs, dates dried cranberries, cherries or blueberries in place of the apricots and raisins. Enjoy.

- Preheat oven to 350 degrees F.
- Spray a 9-inch square baking pan with non-stick cooking spray or brush with oil.
- Combine oats,wheat germ, apricots, raisins, sunflower seeds, cinnamon and salt in a large bowl.
- Combine melted butter and brown sugar in a small bowl until sugar is dissolved.
- Stir in honey, egg and vanilla until smooth.
- Stir liquid mixture into dry mixture until dry ingredients are evenly moistened.
- Press mixture firmly and evenly in prepared pan.
- Bake for 20 minutes, or until golden and firm.
- Cool on wire rack before cutting into squares or bars.
- Wrap individually for easy grab and go breakfasts and snacks.

- Preheat the oven to 350 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.
- Place all ingredients except the syrup and eggs in a food processor and pulse until the mixture is finely chopped. Add the syrup and eggs and pulse until the mixture is well combined. It will resemble a coarse paste.
- Transfer to the baking pan and spread evenly. Bake until just done, about 20 minutes. Cut into 20 squares.

- Line an 8-in. square baking pan with parchment, letting ends extend up sides. Prepare quinoa according to package directions. Transfer to a large bowl. Set aside and allow to cool completely. , In a food processor, combine dates, coconut oil, almond butter, protein powder and vanilla. Cover and pulse until blended. Add coconut and chia seeds. Pulse until combined. Add oats and cooked quinoa. Pulse until combined., Press firmly into prepared pan. Cover and refrigerate for at least 1 hour or until set. Lifting with parchment, remove from pan. Using a serrated knife, cut into bars. Store in the refrigerator.

CHEWY-EWWY GRANOLA ENERGY BAR
This is a modified energy bar from Mollie Katzen's Protein Bar recipe, found at {http://www.fabulousfoods.com}. I try to steer clear from dairy as often as possible and it was tough finding a granola/energy bar recipe that didn't use milk or yogurt. So I kinda took what I liked from this recipe and left what I didn't and added a few other things. It's a really great tasting bar that is egg-free and dairy free (except for the chocolate chips, use carob chips instead or just omit them altogether if you want a truly vegan bar) and packed with nutrition. They're pretty sweet so if you like a less sweet bar use less sugar, choose a less sweet nut butter, and/or substitute dried fruit and chocolate chips for nuts and carob chips. Eat one fresh out of the oven then freeze the rest in freezer zip-bags. Just make sure to defrost or warm them before eating. They're great for breakfast, gym snacks, workday pick-me-ups, and even after-school snacks (I'd bake them in a cookie shape for the latter purpose).

- Preheat oven to 350ºF and prepare a cookie sheet, either use a non-stick or spray a traditional sheet with non-stick spray.
- Mash bananas in peel and set aside. This lets the natural sugars develop.
- Mix dry ingredients in a large bowl. First toss oats, oat bran, whole wheat flour, ground almonds, cinnamon, and salt. Add brown sugar and be sure to integrate it evenly in the mixture, use your CLEAN hands. Next throw in the sunflower and flax seeds, chocolate chips, and dried cranberries.
- In a medium saucepan, over low heat, warm the peanut butter. Slowly add mashed bananas, stirring constantly and further mashing any banana meat that needs it. Add vanilla extract and leave on lowest heat for 2 minutes, stirring constantly. You don't want the butter and bananas to burn.
- Add the banana mixture to the dry mixture and stir (or knead) until the two are fully integrated. It should create a sort of nutty dough.
- Form the dough into 24 bars or logs approximately the size of store-bought granola bars. Place on cookie sheet and bake at 350ºF for 30 minutes. Turn the oven off and leave the bars in for another 25 minutes.
- Enjoy one or two and freeze the remainder in freezer bags.

FRUIT FILLED GRANOLA BARS
I had to develop something that 1. I liked and 2. didn't contain any peanuts or grape or palm products in it for allergy reasons. Most commercial bars have one or more of the above.

- Combine in Mixing bowl the oats, flour, baking soda and brown sugar.
- Cut in margarine until it looks like coarse crumbs.
- Reserving 1/4 cup of mixture for top, press remainder of mixture firmly and evenly into bottom of an ungreased 9X9 pan.
- Spread pureed fruit onto top of oatmeal mixture.
- Sprinkle reserved 1/4 cup of oatmeal mixture onto top, following it with a sprinkling of all of the nuts.
- Press mixture very lightly to make sure all of the nuts are'committed' but not so hard that the fruit all squishes to the top.
- Bake at 350 degrees fahrenheit for approximately 30 minutes or until top is golden.
- Cool in the pan.
- Cut into bars.
- Makes 20-25 bars.

GRANOLA BARS
These are my favorite granola bars, altered from a recipe by Alton Brown. You can use any type of nut and fruit. I also usually replace the honey with brown rice syrup.

- Oil 9x9-inch baking dish and set aside. Preheat oven to 350 degrees F.
- Spread oats, sunflower seeds, almonds, and wheat germ on cookie sheet. Place in oven and toast 15 minutes, stirring occasionally.
- In the meantime, combine honey, brown sugar, oil, extract and salt in medium saucepan and place over medium heat. Cook until the brown sugar has completely dissolved.
- Once the oat mixture is done, remove from oven and reduce the heat to 300. Immediately add the oat mixture to the liquid mixture, add the dried fruit and stir to combine. Turn mixture out into the baking dish and press down (I use a bacon press with parchment paper to get it firmly pressed). Place in oven to bake 25 minutes. Remove from oven and all to cool completely. Cut into squares and store in airtight container for up to one week.
