Fudge Bars with Pecan-Graham Crust image

Steps:

  • Make crust:
  • Preheat oven to 350°F.
  • Into a food processor crumble graham crackers and grind into crumbs. Add pecans, sugar, butter, and salt and pulse motor until nuts are chopped fine. Press crumb mixture evenly onto bottom of an 11- by 7-inch baking pan and bake in middle of oven 5 minutes. Cool crust in pan on a rack.
  • Make fudge layer:
  • In a medium metal bowl set over a saucepan of barley simmering water melt chocolate with butter, stirring. Remove bowl from pan and cool to room temperature. With an electric mixer beat in remaining ingredients, beating until smooth.
  • Spread fudge layer on top of crust and bake in middle of oven 30 to 35 minutes, or until top is set, edges have begun to pull away from sides of pan, and a tester inserted in center comes out with moist chocolate adhering. While fudge is still hot, score with a sharp knife into 24 small bars and cut into bars, wiping knife blade clean after each cut. Cool bars in pans on a rack. Bars will continue to set as they cool but will remain somewhat soft. Bars keep in an airtight container 3 days or, covered and chilled, 1 week.

For crust
five 5- by 2 1/2-inch graham crackers or 2/3 cup crushed graham crackers
1/2 cup pecans, toasted lightly
2 tablespoons sugar
3/4 stick (6 tablespoons) unsalted butter, melted
1/4 teaspoon salt
For fudge layer
4 ounces unsweetened chocolate, chopped
1 stick (1/2 cup) unsalted butter, cut into pieces
2 large eggs, beaten lightly
1/4 teaspoon vanilla
1/4 teaspoon salt
2 cups firmly packed light brown sugar
1 cup all-purpose flour

EASY PECAN GRAHAM BARS

These bars taste a lot like pecan pie and are so easy to make. I got this recipe from a fellow worker, whose grandmother makes them every Christmas--delish!!! Very few ingredients, and not time consuming. Enjoy!!!!

Easy Pecan Graham Bars image

Steps:

  • Line ungreased cookie sheet with graham cracker squares.
  • In saucepan, melt margarine and brown sugar.
  • Bring to rolling boil and boil for 2 minutes.
  • Stir in chopped pecans.
  • Pour over graham crackers and spread evenly.
  • Bake in 350° oven for 10 minutes.
  • Allow to cool, and break squares into halves.
  • Enjoy!

Steps:

  • Heat oven to 375°F. Beat flour, 3/4 cup butter, 1/2 cup sugar, the cocoa and 1 teaspoon vanilla in large bowl with electric mixer on low speed until crumbly. Press in bottom of ungreased 15x10x1-inch pan. Bake 20 minutes.
  • Meanwhile, beat eggs, 1/2 cup sugar, 3 tablespoons butter, the corn syrup and 1/2 teaspoon vanilla in medium bowl with wire whisk until smooth. Stir in pecans and chocolate chips. Spoon evenly over baked crust.
  • Bake about 15 minutes or until set. Cool completely, about 1 hour. For bars, cut into 8 rows by 4 rows.

  • Line a 7 or 8 inch square baking pan with parchment paper so it sticks out over the sides of the pan. This will allow you to lift the bars out once set.
  • Add the cashews, almonds, dates, cocoa powder, vanilla and salt to a food processor and blend into a crumbly but sticky dough. It should almost be coming together in one big clump as you blend and you should be able to press the dough between your fingers. If the dough seems too dry or crumbly, which can happen if your dates were too dry, add 1-2 tbsp warm water and process again. That should do the trick. Use your hands to firmly press the dough into the lined baking pan until smooth and even.
  • Mix the almond butter, cocoa powder, maple syrup and coconut oil together in a bowl until smooth and combined. It will be quite thick. Spread the fudge over the crust layer in the pan in an even layer.
  • Melt the chocolate in the microwave in 15-20 second increments or using a double boiler until completely smooth, then stir in the the almond butter. Spread the melted chocolate over the fudge layer in the pan using a spatula to evenly spread and smooth as best you can.
