Steps:
- Peel and dice the potatoes and then boil until they are soft.
- Heat oil over medium heat in small pan.
- Saute the garlic for about 30 seconds.
- Add the soy milk and reduce to a simmer.
- Keep this mixture warm until the potatoes are cooked.
- Mash the potatoes in a large bowl.
- Add the margarine, and then add the soy milk mixture and nutritional yeast and mix until creamy.
- For the gravy, saute the onions in margarine until golden.
- Stir in the flour and cashews and cook for another 3 minutes, stirring constantly.
- Add the broth gradually, whisking constantly to form a smooth mix.
- Add the soy sauce, garlic and pepper.
- Bring to a boil, and then turn down heat and simmer until thick.
- Puree in the blender until smooth.

Steps:
- Place the potatoes and garlic in a steamer basket fitted over a large pot of boiling water. Cover and steam until the potatoes are knife-tender, 12 to 15 minutes. Warm the chicken broth in a small pot on the stove or in a glass container in the microwave.
- Remove the steamer basket and drain the water from the large pot. Transfer the potatoes and garlic to the pot, add the oil, salt, pepper, and broth and mash until smooth.

I was always wanting the Garlic mashed potatoes I ate in restaurants to have more garlic. My mom has always used evaporated milk and everyone really loves her mashed potatoes. I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. To make it absolutely correct preface each of the steps with Make Husband...

Steps:
- Peel potatoes and cut into 1/2 inch thick slices.
- Peel garlic into individual cloves.
- Simmer potato slices and garlic cloves in a sauce pan with enough water to barely cover.
- Once the potatoes are tender, drain the water from the pan, reserving 1/2 cup of water.
- Mash the potatoes with the evaporated milk and butter.
- Depending upon the size of the potatoes you may need more liquid.
- You can use some of the reserved potato water, or more butter, or regular milk.
- I usually use regular milk.
- Season to taste with salt and butter.
GARLICKY MASHED POTATOES

- Preheat the oven to 350 degrees F.
- Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.
GARLIC MASHED POTATOES
Mashed potatoes, the American comfort food, should be satisfying from the first bite to the last, and if correctly made, they are. Don't cook the potatoes until they fall apart. Instead, the chunks should hold together and just slip off a knife when pierced. Boiling them is destructive, so simmer them gently. If mashed potatoes are sticky, the potatoes were overcooked and overwhipped. If they are grainy and chunky, they were undercooked.

- Put the potatoes in a medium saucepan and add just enough water to cover them. Add 1 teaspoon salt and bring to a simmer over medium heat. Do not boil. Cook for 12 to 15 minutes or until the potatoes are just tender enough to slide off a paring knife when pierced. Drain well and return to the pan. Set the pan over low heat and cook for 1 to 2 minutes to dry the potatoes out.
- Remove from the heat and lightly mash the potatoes with a fork just to break them up. Stir in the milk, mashed garlic and olive oil. Run the potatoes through a food mill or mash them with a potato masher to the desired consistency. Season with salt and pepper, to taste, and serve immediately.
- Put the cloves in a dry cast iron skillet and cook over low heat for 20 to 30 minutes, or until softened. Turn frequently so that the cloves soften but do not brown. Slide the cloves from the skillet onto a plate to cool to the touch. Squeeze the softened garlic pulp from the individual cloves.
GARLIC MASHED POTATOES
Steps:
- In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
- Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
- Process the potatoes and garlic through a food mill fitted with the medium disk. Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

- In a medium saucepan, melt butter over medium-low heat. Add garlic and cook, stirring occasionally, until garlic caramelizes, 6 to 7 minutes. Remove from heat; let cool slightly.
