Steps:

  • Dissolve yeast in lukewarm milk in a bowl. Stir 1 tablespoon sugar and 1 tablespoon flour into milk mixture. Let stand until yeast softens and begins to form a creamy foam, about 30 minutes.
  • Mix half of the remaining sugar, oil, 2 eggs, lemon zest, and salt together in a bowl. Add remaining flour and yeast mixture and knead into a smooth dough. Place dough in a large, lightly oiled bowl and turn to coat. Cover with a clean towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Combine remaining sugar, remaining eggs, chopped apples, almond meal, marzipan, raisins, rum, cinnamon, and almond extract in a large bowl and mix well for the filling.
  • Line a baking sheet with parchment paper. Dust a work surface with flour and roll out dough into a rectangle. Dust with bread crumbs and cover with apple filling, leaving a 1-inch border. Roll up dough from the 2 long sides, meeting in the middle. Place on the prepared baking sheet, cover with a clean cloth, and let rise, about 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake stollen in the preheated oven for about 1 hour. Cover with aluminum foil after 30 minutes if stollen gets too dark. Remove from oven. Brush hot stollen with melted butter and dust generously with confectioners' sugar. Let cool before slicing.

  • Place flour in a mixer bowl; beat in 1/4 cup oil (mixture will be slightly crumbly). In a small bowl, slowly whisk warm water into beaten egg; add to flour mixture, mixing well. Beat in remaining oil until smooth. Transfer to a greased bowl, turning once to grease the top. Cover and let rest in a warm place, about 30 minutes., Preheat oven to 350°. Spread bread crumbs into an ungreased 15x10x1-in. baking pan. Bake 10-15 minutes or until golden brown, stirring occasionally. Cool completely., Tape a 30x15-in. sheet of parchment onto a work surface; dust lightly with flour. Divide dough in half; place 1 portion on parchment and roll to a very thin 24x15-in. rectangle. GERMAN APPLE COOKIE CRUST CAKE

An out-of-the-ordinary recipe, the layers in this cake (a butter cookie crust, apples, sour cream custard and an apricot glaze) look so nice when sliced up. The flavors are wonderful -- rich, but not too sweet. And it's even prettier with white decorator icing used to pipe flowers, designs, a lattice criss-cross, or a piped edging around the top and bottom. It's from one of my favorite cook books, The Creative Chef 2. The time includes chilling time for the cookie crust dough. There will be leftover dough from the cookie crust, which I usually use to make butter cookies.

German Apple Cookie Crust Cake image

Steps:

  • Butter Cookie Crust: In a large bowl, combine the sugar, egg, butter& flour.
  • Using your fingertips, work the mixture together until the mixture resembles crumbs (as if for pastry).
  • Cover the dough& refrigerate for at least 1 hour, or until slightly firm.
  • Preheat oven to 375, lightly butter a 9" springform pan and dustly lightly with flour, tapping out any excess.
  • Press about half of the dough into the pan, covering the bottom and reaching about halfway up the sides.
  • Save the remaining dough for another use.
  • Peel and core the apples, and cut them in half lengthwise; then, with the point of a small knife, cut out small v-shaped strips (the cuts should be wider on the exposed skin-side of the apple and come to a v shape when you cut into the fruit, approximately 3/4 to an inch deep).
  • Sprinkle the bottom of the cookie crust with the breadcrumbs (see note at bottom of recipe) to form a thin, even layer.
  • Arrange the apples, rounded sides up, on top of the breadcrumbs.
  • Using leftover apples, cut them to fill in any empty space with pieces as large as possible, as you don't want any gaps.
  • In a large bowl, whisk together the sour cream, heavy cream, sugar, eggs, lemon juice, cornstarch& vanilla until well-blended.
  • Pour this mixture over the apples and bake for 60-90 minutes, or until the apples are tender and the filling is set.
  • Remove the pan from the oven& set on a wire rack to cool (do not remove from the pan at this point).
  • In a small saucepan, heat and stir the apricot preserves over medium heat until warm.
  • When the cake has cooled slightly, brush the preserves carefully over the top to form a glaze.
  • Remove the cake from the pan after the cake has cooled completely.
  • Note: I add a little sugar& cinnamon to the breadcrumbs to make them a bit sweeter and more flavorful, since it is not too sweet a cake to begin with (I use about a tbs. of sugar and about 1/2 tsp. cinnamon, but you can omit this completely, or use amounts to your own taste).

  • Preheat the oven to 375 degrees Fahrenheit. Butter an 8-inch square pan or equivalent-size baking dish.
  • In a small bowl, whisk together the flour, baking powder, and salt. In a medium bowl, cream together the butter and 1 cup of the sugar. Stir in the eggs and vanilla. Add the flour mixture and beat until combined. Spread the mixture evenly in the prepared pan.

  • Preheat oven to 350 degrees.
  • Prepare a large bundt or tube pan with a light coating of cooking spray.
  • Mix together the apples, sugar and cinnamon and set aside.

Mrs. Vollmer's German Apple Cake image

Steps:

  • For the crust:.
  • Blend the softened butter with the sugar thoroughly.
  • When creamy, add egg yolks vanilla and salt.
  • Mix well.
  • Blend in flour gradually, mixing lightly by hand until a homogenous mass.
  • Pat dough into a 12" rectangular pyrex baking dish until it is evenly distributed over the bottom and part way up the sides.
  • For the filling:.
  • Peel and core apples and slice them into fairly thin slices.
  • Sprinkle the slices with lemon juice, cinnamon and sugar as you go, placing them into a bowl, until all the apples are sliced.
  • Warm the jam.
  • If it is in a glass jar, loosen the lid and place the jar in a small pot of water, with the water coming half way up the side of jar.
  • Simmer over low heat until jam is soft.
  • Spread half the jam on the surface of the crust, and then place the apples, slightly overlapping, in as many rows as the bottom will take.
  • If you are using Mackintosh apples, they will shrink more and tend to break.
  • Keep your prettiest slices for the top, and arrange them attractively.
  • Using a pastry brush, spread the rest of the jam across the the top of the cake.
  • Sprinkle the top with almonds (I always leave this out unless I'm making it for a certain person).
  • Bake in a 350° oven for about an hour, until crust and apples are golden.

  • In a large bowl, beat the eggs, sugar, oil and vanilla. Combine the flour, cinnamon, baking soda and salt; add to egg mixture and mix well. Fold in apples and nuts. Pour into a greased 13x9-in. baking dish. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, beat cream cheese and butter. Add confectioners' sugar, beating until smooth. Spread over cake. Refrigerate leftovers.
