Albanian Vegetable Casserole (Gjelle Me Zarzavata) image

Steps:

  • Preheat oven to 375°F
  • Lay potatoes in the bottom of a greased baking dish.
  • Combine tomatoes, carrots, celery, onions, garlic. parsley, salt and pepper, and mix well.
  • Spread this mixture over the potatoes.
  • Add the water.
  • Bake for 45 minutes.
  • Pour oil over vegetables.
  • Bake 15 minutes more.

Steps:

  • Preheat oven to 375°F.
  • Heat 3 tablespoons oil in a large skillet.
  • Add meat and brown on all sides. Remove and set aside.
  • Place potatoes in a greased baking dish large enough to hold all ingredients.
  • Spread meat over potatoes.
  • Combine tomatoes, carrots, celery, onion, pepper, garlic, parsley, salt and pepper.
  • Spread mixture over meat.
  • Pour in broth.
  • Cover and bake for 45 minutes.
  • Uncover, pour remaining oil over top, and bake 20 minutes more.

This recipe is from week four of my food blog, "Travel by Stove." I am attempting to cook one meal from every country on Earth, and Albania is my fourth stop. This is actually a very simple recipe consisting of chicken with a thick walnut sauce. You can cook the breasts whole or dice them first.

Albania: Gjellë Me Arra (Chicken With Walnuts) image

Steps:

  • Cook the chicken breasts in olive oil until they are done.
  • When the chicken is done (I use a meat thermometer to make sure), take it out of the pan and add the flour. Keep stirring until brown (don't overcook!), then add half of the butter, garlic, walnuts and egg yolks. Continue to stir--you don't want the yolks to solidify.
  • If your recipe turns out like mine did, you will end up with a kind of lump of walnuts. Although the original recipe did not call for chicken stock, I found I had to add some just to get it to a sauce-like consistency. Just use as much as it takes to make the sauce smooth -- more if you like a watery sauce. When it's ready, remove from the heat and add the chicken, stirring to coat.

2 tablespoons flour
12 shelled walnuts, crushed to a powder
2 egg yolks, beaten
2 garlic cloves, minced
1/2 cup butter
6 chicken breasts
1/2 cup chicken stock, more if needed

VEGETARIAN ALBANIAN LEEK CASSEROLE (TAVE ME PRESH)

This is a vegetarian version of a traditional Albanian dish. It makes a tasty side and is delicious served with yogurt, which is commonly eaten in Albanian meals. You can use any mushrooms you want, but the stronger tasting ones are better. Spice to taste, I like more red pepper than the Albanians probably do. Adapted from 20 Albanian Recipes and submitted for My Food Odyssey.

Vegetarian Albanian Leek Casserole (Tave Me Presh) image

Steps:

  • Wash and cut on a slant into 1-inch thick slices the whites and pale green of the leeks.
  • Saute leeks in a little oil and place in a baking pan.
  • Chop onions and mushrooms coarsely.
  • Saute onion and mushrooms in remaining oil.
  • Add broth powder, water, tomato sauce, red pepper, salt and pepper, and bring to a boil. If your mushrooms are not very watery, add a little more water and broth.
  • Pour onion/mushroom mixture over the leeks.
  • Bake for 45 minutes at 375 degrees.
  • Serve hot.

Steps:

  • Preheat oven to 375°F Spread glass pan with butter. Cook spaghetti according to directions on box and drain.
  • In a lg bowl add 3 eggs, feta cheese and milk, mix together.
  • Place cooked spaghetti into a 9x12 glass baking dish.
  • Add in egg/cheese and milk mixture.
  • If spaghetti isn't covered, add in more milk and mix until milk is just covering spaghetti is covered. Cover with foil and bake for 40 minutes approximately Let cool for 10 and serve. Also good cold!
