Glazed Limoncello Cookies Recipes
LIMONCELLO COOKIES
These are traditional Limoncello cookies, popular at weddings. Cook time does not include chilling time. A recipe for Limoncello: Recipe #167289

Steps:
- For the cookies:
- Cream butter and confectioner's sugar with hand mixer. Stir in flour, lemon zest, limoncello, and salt until dough forms.
- Roll into log, about 1 1/2 inches wide and 10 inches long. Wrap in plastic wrap and chill for a few hours or overnight.
- When ready to bake, preheat oven to 350 degrees.
- Line cookie sheet with greased parchment paper. Take golf-ball-size piece of dough and roll between palms to form a lemon shape. Flatten until dough is 1/4 inch to 1/2 inch thick.
- Bake for 20 to 25 minutes, or until cookies just begin to brown on bottom. The dough will not expand on cookie sheet.
- Remove from oven and cool completely.
- For the glaze: Mix sugar and limoncello together in small bowl.
- When cookies have cooled completely, drizzle glaze over top or spread on lightly with knife.

SOFT LEMON COOKIES WITH GLAZE
Delicious soft lemon cookies with a glaze. I make my glaze with a little lemon juice but you can use milk if you want it sweeter.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix flour, sugar, baking soda, and salt together in a medium bowl. Use a spoon to make a well in the center of the mixture. Pour oil, lemon juice, and vanilla extract in the well. Mix and knead until a dough forms.
- Roll into balls and flatten with the heel of your hand or anything with a flat surface. Place about 2 inches apart on ungreased cookie sheets.
- Bake in the preheated oven until edges are golden, about 8 minutes for a softer cookie, 10 to 12 minutes for a crispier cookie. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more.
- While cookies cool, whisk together the powdered sugar and lemon juice and glaze cookies however you like.
