GOOEY GOUDA PUFF-PASTRY BITES
These cheesy and easy four-ingredient appetizers will remind you of brie baked 'en croûte'-which is the French term for anything baked in pastry. Here, the delicious handheld parcels are made from storebought puff pastry and filled with nutty Gouda cheese. Topped off with a dollop of lingonberry jam for sweetness, they'll be the first to go on the buffet table!

Steps:
- Preheat oven to 425°F. On a lightly floured surface, roll out pastry to an approximately 11-by-16-inch rectangle. Trim edges straight to a 10-by-15-inch rectangle. With the tines of a fork, prick pastry all over at 1/2-inch intervals. Cut into twenty-four 2 1/2-inch squares (a 4-by-6 grid). Press each square into the cup of a mini muffin tin. Spoon 1/4 teaspoon Dijon into bottom of each pastry shell. Refrigerate until pastry is firm, at least 15 minutes.
- Bake until pastry cups are puffed, golden along edges, and beginning to set, about 15 minutes. Working quickly, remove from oven and press a cube of cheese into center of each pastry with the handle of a wooden spoon. (Cheese should depress pastry to reach bottom of cup.)
- Continue baking until pastry is golden brown and cheese is melted, 8 to 10 minutes more. Let cool in tins a few minutes. Transfer to a serving tray, top with jam, and sprinkle with pepper. Serve warm.
GOUDA AND APPLE PUFF POCKETS

- Heat the oven to 400 degrees F. Stir the apple, chives and sugar in a medium bowl.
- Unfold 1 pastry sheet on a lightly floured surface. Roll the pastry sheet into a 16x12-inch rectangle. Cut into 12 (4-inch) squares. Cut each pastry square in half diagonally to make 24 triangles. Repeat with the remaining pastry sheet.
- Place about 1/2 teaspoon apple mixture on the bottom third of the longest side of each pastry triangle. Top each with 1 cheese piece. Brush the 2 bottom corners with water. Fold the bottom corners over the filling and press to seal. Press the bottom edge of the pastry to seal, leaving the top of the pastry open. Place the pastries onto 2 baking sheets.
- Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes. Sprinkle with additional chopped chives, if desired.
FESTIVE BAKED BRIE BITES

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Cube each wheel of Brie into 12 pieces. They do not need to be perfect cubes. Set aside.
- Mix the cranberries and pistachios together in a small bowl. Set aside.
- Lightly dust a cutting board with flour. Unroll the crescent dough (it should be an 8-by-12-inch sheet) onto the dusted surface. Using a knife, cut 4 lines down the 8-inch side and 6 across on the 12-inch side to get 24 squares.
- Place a cube of Brie in the center of each dough square. Sprinkle about 1/2 teaspoon of the pistachio and cranberry mixture over the top of each cube of Brie. Fold the corners of each square together, lightly pinching to seal everything in. Transfer the bites to the prepared baking sheet.
- Whisk together the egg and 1 tablespoon water in a small bowl and brush the top of each bite with the egg wash. Sprinkle each with a little rosemary and a bit of sea salt. Bake until golden brown, 12 to 14 minutes. Let cool for 2 to 3 minutes.
- Carefully transfer the bites to a serving platter. Scatter the pomegranate seeds around the bites, drizzle with honey and frame the platter with rosemary sprigs for color and festive fun. Enjoy!

- Make the Spiced Rum Cranberry Sauce: Add the sugar & water to a medium saucepan over medium high heat. Bring this to a boil, and then reduce the heat to medium, stirring constantly until the sugar is dissolved (this will only take a couple of minutes). Once the sugar is dissolved, lower the heat to a simmer over low heat, and add the cranberries. Bring the mixture to a boil again, and then reduce the heat to a simmer over medium low heat. Cook, stirring occasionally, until the cranberries are mostly broken down - about 10 minutes. (Don't' freak if the cranberries aren't breaking down - just turn up the heat a bit, and keep cooking them until they're mostly all broken down.)Next, stir in the maple syrup, spiced rum, allspice, and orange zest. Taste and add more rum or any of the other mix-ins if desired. Stick your pot of cranberry sauce in the fridge to chill and thicken up while you get the rest of the recipe ready. (You can scrape it into a smaller bowl if your fridge is too full to
- Assemble the Puff Pastry Bites: Preheat your oven to 375 degrees F. Roll your thawed puff pastry out on a lightly floured counter until it's about 14 x 12. Cut into 12 equal (doesn't need to be perfect) squares. Spray a muffin tin well with nonstick spray. Place one square into each of the muffin cavities. Add about 1 tablespoon of gouda to each, and top with 1 tablespoon of the chilled cranberry sauce. Beat the egg in a small bowl and brush the exposed parts of the puff pastry with the egg.
- Bake: Bake the bites for 21 to 23 minutes. The puff pastry will be golden brown and the cranberry sauce and cheese will be bubbly. Let cool in the pan a few minutes, then use a butter knife to loosen and pop them out of the muffin tin.
