This is from the August 2011 edition of "Guideposts." It's a small recipe - only makes one dozen, so it's great for mid-week treats or lunch-box surprises.

Steps:

  • Preheat oven to 350°F.
  • Cream sugars, butter and shortening. Add eggs, one at a time, stirring after each edition.
  • Add soda and salt, then sift in flour. Stir, but do not overmix.
  • Fold in chocolate chips.
  • Place large heaps on baking sheet or stone. Bake for 8 minutes. Remove cookies while they still look soft (they'll continue to bake on the stone if you're using one.).

Steps:

  • Preheat oven to 300 degrees F.
  • In medium bowl combine flour, baking soda, and salt.
  • Mix well with wire whisk.
  • Set aside.
  • In a large bowl with an electric mixer blend brown and white sugar at medium speed.
  • Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
  • Add eggs and vanilla extract, and mix at medium speed until just blended.
  • DO NOT OVERMIX!
  • Add the flour mixture and chocolate chips, and blend at low speed until just mixed.
  • DO NOT OVERMIX!
  • Drop by rounded Tablespoons onto an ungreased cookie sheet, 2 inches apart.
  • Bake 22-24 minutes or until golden brown.
  • Transfer cookies immediately to a cool surface with a spatula.

Granola Chocolate Chip Cookies image

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric stand mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs 1 at a time, scraping the bowl after each.
  • Mix together the flour, salt and baking soda in a medium bowl. Add it to the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats, Granola, apricots and chocolate chips until just combined.
  • Use your preferred-size cookie scoop (or a regular spoon) to drop portions of dough onto lightly greased baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, just cook a little longer!
  • Let the cookies cool slightly on the baking sheets, then transfer them to a plate for serving.
  • Preheat the oven to 325 degrees F.
  • In a bowl, toss the oats with the oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 12 minutes, shaking the pans twice during the cooking time and making sure the oats don't burn. Set aside to cool a bit.
  • In a medium saucepan, combine the brown sugar, honey and molasses. Stir the mixture until combined, then heat over medium heat, stirring, until barely bubbling. Stir in the vanilla extract.
  • Toss together the toasted oats, pecans, sunflower seeds and almonds in a large bowl. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
  • Thoroughly grease a baking sheet or line it with greased foil. Spread the mixture onto the baking sheet and bake until golden, about 30 minutes. Let cool, then use a fork to make clusters. Store in a jar until ready to use.

  • 1. In a medium bowl; Whisk together flour, soda and salt. Set a side.
  • 2. In a large bowl; Using a mixer; Mix softened butter and both sugar's until it forms a grainy paste. Add eggs and vanilla; mix until light and fluffy.
  • 3. Add flour mixture and chocolate chips; mix on low speed until it's just mixed. Do not over mix.
  • 4. Drop by rounded tablespoons unto ungreased cookie sheet, place 2 inches apart. Bake at 300 degrees; 20-25 minutes or until golden brown. Transfer immediately unto cooling rack.

Steps:

  • Whisk flour, salt, and baking soda together in a bowl. In a separate bowl, cream the butter, white sugar, and brown sugar together until mixture is light and fluffy, 3 to 4 minutes. Add the egg, milk, and vanilla extract. Whisk liquids together in small areas around the bowl, then all together to avoid separation.
  • Pour dry ingredients into the wet ingredients; stir until flour is thoroughly mixed in. Stir in the chocolate chips.
  • Transfer dough to a resealable plastic bag. Refrigerate until dough is firm, at least 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Line baking sheet with parchment paper.
  • Scoop out rounded tablespoons of dough and place on prepared baking sheet, leaving 4 inches of space between cookies (about 8 per sheet). Bake in preheated oven until cookies are golden brown, about 12 minutes. Slide parchment and cookies onto a cooling rack for a few minutes. Remove parchment and finish cooling the cookies on the rack.
