GRANDMA'S REFRIGERATOR COOKIES

Creamy chocolate cookie with coconut and walnuts. No baking, just put in the refrigerator. This was my grandmother's personal version of this no-bake cookie. This is much richer and a pure chocolate lover's delight.

Grandma's Refrigerator Cookies image

Steps:

  • Line a baking sheet with waxed paper.
  • Combine sugar, milk, and butter in a saucepan. Bring to a boil; simmer until sugar is dissolved, about 2 minutes. Remove from heat; stir in chocolate chips, oats, coconut, and walnuts. Drop spoonfuls of mixture 1 inch apart on the lined baking sheet.
  • Chill until firm, about 1 hour.

BETTY BROWN'S BUTTER COOKIES

This recipe came from Great Gramma LaLonde's neighbor - Betty Brown. It is the only cut-out cookie I remember Grams Lorette ever making. I like them really thin and crispy. Dad prefers them thicker. Frosted is the best, using confectioners' sugar, flavoring, and milk.

Steps:

  • Beat butter, sugar, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy. Sift flour, cream of tartar, baking soda, and salt together in a separate bowl; mix, 1 cup at a time, into creamed butter mixture until dough is just mixed. Form dough into 1-inch-thick disks and place on a plate; chill in refrigerator, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll disks into desired thickness on a lightly floured work surface using a floured rolling pin. Arrange dough on a baking sheet.
  • Bake in the preheated oven until cookies are just starting to turn golden brown, 7 to 10 minutes.

Steps:

  • Preheat oven to 350 degrees F.
  • In large mixing bowl or electric mixer beat; butter, egg, vanilla, and sugar.
  • Then add 2 1/2 cups of flour to mixture and mix until creamy.
  • Roll out dough on flat surface until about 1/2 inch thick.
  • Use cookie cutters of your choice to cut the dough.
  • Place the dough on a greased cookie sheet, and bake for 8-10 minutes.
  • After removing the cookies from the oven, let them cool.
  • Frosting and sprinkles are opptional but recommended by Grandma herself!
  • Enjoy!

GREAT GRANDMA'S SOUR CREAM DROP COOKIES

This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.

Great Grandma's Sour Cream Drop Cookies image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line two rimmed baking sheets with parchment paper.
  • Cream sugar, shortening, and butter together in the bowl of a stand mixer on medium-high speed until light and fluffy, about 1 minute.
  • Mix in sour cream and lemon zest on low speed until no streaks of sour cream remain. Add eggs, one at a time, mixing on medium-low just until there are no streaks of yolk, and scraping down the sides of the bowl between additions. Add flour, salt, baking soda, and baking powder all at once and mix just to combine.
  • Drop by heaping tablespoons on the prepared baking sheets, about 2 inches apart.
  • Bake in the preheated oven until the tops are puffy and spring back when lightly touched with a finger, about 10 minutes. They should be light golden, with occasional spots of pale golden brown.

Steps:

  • Mix together sugar, margarine, peanut butter, and rice krispies together and form into balls. (As large/small as you want them. I make them smaller than a golf ball.).
  • In a double boiler, melt the chocolate bar and chips together and add paraffin wax, may add more wax if needed.
  • Once chocolate is melted, dip the balls in chocolate and place on wax paper to cool.
  • After the balls settle, store them away. We keep them in the refrigerator or freezer during the holidays.
