MY GRANDMOTHER'S FRESH PEACH COBBLER

My grandmother used this recipe every summer when the peaches were ripe. She got the recipe from her church cookbook. You can use any almost any kind of fruit in the cobbler, it will still be good.

Steps:

  • Preheat oven to 350°.
  • Pour melted butter into an 8x8 pan.
  • Whisk together the flour, 3/4 cup of sugar, baking powder and milk.
  • Pour over melted butter.
  • Cover with peach slices.
  • Cover with 3/4 cup sugar (I know this will seem like a lot, but use it all.).
  • Bake until batter rises to top and forms a nice brown crust, about 20 - 30 minutes.

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the peaches in a 9-by-9-inch baking pan. In a medium bowl, mix together the flour, 3/4 cup of the sugar, the baking powder and 1/2 teaspoon of the salt. Add the milk and melted butter and mix well. Pour the batter evenly over the peaches.
  • In a small bowl, mix together the remaining 1/4 cup sugar, the cornstarch and remaining 1/2 teaspoon salt. Sprinkle the mixture over the batter. Evenly pour the boiling water all over.
  • Bake until golden brown and bubbling, 50 minutes. Serve in individual dessert dishes with vanilla ice cream or whipped cream, if desired.

GREAT GREAT GRANDMA'S FRESH PEACH COBBLER

This recipe has been in my family for generations. The brown sugar and the juices from the fresh peaches caramelize as the batter on top bakes into a moist cake. This is wonderful served warm with heavy cream, whipped cream, or ice cream. **NOTE: The number of peaches needed will depend on their size. You want an even layer, covering the bottom of your baking dish. I have use anywhere from 4 large peaches to 6 small peaches. If you place your peaches into a pot of boiling water for about 30 - 40 seconds and then into cold water, the peels come off very easy. Another tip; before peeling (after the plunge into the boiling water), take your paring knife and starting from the stem end, slice around the peach ending were you started, then while holding each half, twist in opposite directions to release the pit (much like you would like an avocado). Then peel and slice. If you have really sweet peaches, you can adjust the brown sugar to 3/4 cup.

  • Preheat oven to 350°F and butter a 9"X12" baking dish.
  • Peel and slice peaches and place in prepared dish.
  • Sprinkle the brown sugar evenly over the peaches.
  • Cream the butter (which should equal the size of your egg) with the white sugar.
  • Place your egg into a 1 cup measure and add enough milk to equal 1 cup.

My husband's grandmother was known by everyone for her good cooking and her peach cobbler was among her all-time favorite crowd pleasers. Unfortunately she became ill with cancer and, not to sound heartless, but it occurred to me that her recipe would be lost forever. She dictated this to me not long before she passed away. I scribbled it on some paper and hope it's accurate - she was one of those "pinch of this" type of cooks so some of the measurements are guesses. I have made it once and the family said it was her cobbler. Hope you enjoy it as much as we do.

Grandma's Famous Peach Cobbler image

Steps:

  • Make crust by cutting shortening into flour and salt. Roll out into two crusts. Put one into 13x9 inch pan. Bake only the crust in the pan at 350 for about 15 minutes. You don't want it to be completely cooked.
  • Put peaches in pan over medium heat. Add sugar, vanilla, and cinnamon.
  • Mix water and cornstarch and add to peach mixture. Cook until thick.
  • Pour peach mixture on top of crust.
  • Place second, uncooked crust on top of peach mixture.
  • Bake approximately five minutes or until brown.
  • Mix powdered sugar and milk making a glaze. You may need to add more milk as needed.
  • Brush glaze on top of crust and bake until it reaches a nice color, about five minutes.
