GRANDMA T'S PINEAPPLE CREAM PIE
My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

Steps:
- Whisk sugar, flour, and salt together in a saucepan over medium heat. Add milk and cook, whisking constantly, until mixture thickens and begins to bubble, 3 to 5 minutes. Remove from heat.
- Stir pineapple, egg yolks, and butter into milk mixture. Return to heat and cook over medium heat until mixture begins to bubble, 3 to 5 minutes. Continue cooking, stirring constantly, until hot and thick, about 2 minutes more. Pour mixture into prepared pie crust. Refrigerate until chilled, at least 3 hours.

My gramma used to bake cakes and pies during the Depression and my grampa would sell them door-to-door and on the street corners to support them during that awful time. This is one of my favorites.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a 9-inch cast iron skillet over medium heat. Stir in brown sugar; heat until bubbly. Remove from heat. Arrange pineapple rings and pecans on top.
- Sift flour, baking powder, and salt together in a bowl; repeat sifting twice more.
- Beat white sugar and eggs together in a bowl with an electric mixer until light and fluffy.
- Alternate folding flour mixture and pineapple juice into the egg mixture in 3 batches, beginning and ending with the flour mixture. Pour over pineapple slices.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Let cool in the skillet for 5 minutes. Invert carefully onto a serving platter.

MY GRANDMA'S CANDIED YAMS WITH PINEAPPLE
Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

- Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
- In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
- Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
- Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

- Crust: Mix graham crackers and butter together.
- Press into 9 x 13 inch pan.
- Bake in 250f degree oven for 15 minutes.
- Cool.
- Filling: In a bowl, cream together butter and icing sugar.
- Add eggs and beat well.
- Spread over cooled crust.
- Bake in 350f degree oven for 25 minutes.
- Cool.
- Topping: Beat together whipping cream, vanilla and icing sugar until stiff.
- Fold in pineapple.
- Spread over filling.
- Sprinkle extra graham wafer crumbs on top for a finishing touch.
- Chill.
- Cut into squares and serve.
GRANDMA'S PINEAPPLE DELIGHT

- 1. Pre-heat oven to 350. Grease and flour 9x12 cake pan. Bake as directed on box. Let cool.
- 2. Drain pineapple. Cream Pineapple and cream cheese together. Set aside. Prepare vanilla pudding. Set aside.
- 3. Layer pineapple and cream cheese mixture on top of cooled cake. Then layer pudding on top of pineapple mixture. Spread Cool Whip on top of pudding for final layer. Serve cold.

- In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust.
