GREEK STYLE POTATOES

Greek Style Potatoes is a simple recipe, and the closest I can get to the real thing. The best is that it can be adjusted to your taste as you bake it. I sometimes add a little more lemon. The potatoes are moist, and great with green beans and baked chicken with a little salsa and feta on top.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl, mix olive oil, water, garlic, lemon juice, thyme, rosemary, bouillon cubes and pepper.
  • Arrange potatoes evenly in the bottom of a medium baking dish. Pour the olive oil mixture over the potatoes. Cover, and bake 1 1/2 to 2 hours in the preheated oven, turning occasionally, until tender but firm.

Granny's Greek Fried Potatoes image

Steps:

  • Peel and cut two large potatoes in thick pieces, salt them, sprinkle them with the juice of half a lemon and stir them well.
  • Cover them and leave them for about 45 minutes.
  • In a deep frying pan, heat up 2 cups of virgin olive oil.
  • Drop the potatoes in the hot olive oil and let them fry with no cover until they get golden.
  • Take them out with a strainer-ladle and place them on kitchen paper towels so that they totally drain from the excess oil. (They are eaten hot.).

Steps:

  • Preheat the oven to 425 degrees F. Put the olive oil, lemon juice, shallot, garlic, oregano and parsley in a food processor; add 1 teaspoon salt, and pepper to taste. Puree until mostly smooth.
  • Toss the potatoes with 1/2 cup of the prepared vinaigrette in a large bowl and spread in a single layer on a large rimmed baking sheet. (Reserve the remaining vinaigrette.) Roast the potatoes until tender and golden, turning occasionally, 45 minutes to 1 hour.
  • Transfer the potatoes to a platter and drizzle with some of the remaining vinaigrette. Season with salt and garnish with the chopped parsley. Serve with the remaining vinaigrette on the side.

Steps:

  • Preheat the oven to 250 degrees F. Combine the potatoes, garlic, bay leaves and peppercorns in a large pot. Add 2 tablespoons salt and enough water to cover the potatoes by 1 inch. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, about 15 minutes. Remove the potatoes to a paper towel?lined plate with a slotted spoon; gently blot dry (it?s OK if some of the potatoes crumble). Let cool completely.
  • Set a wire rack on a rimmed baking sheet. Melt the schmaltz in a large pot or Dutch oven over medium heat (you should have about 2 inches in the pot) and heat until a deep-fry thermometer registers 350 degrees F. Working in batches, fry the potatoes until browned and crisp, 4 to 6 minutes. Remove to the rack with a slotted spoon and immediately sprinkle with salt. Keep warm in the oven between batches.
  • Add the parsley and sage leaves to the hot schmaltz and fry a few seconds until just crisp. Remove to a paper towel?lined plate with a slotted spoon and sprinkle with salt. Top the potatoes with the fried herbs.

Steps:

  • Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
  • In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
  • Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Steps:

  • To a large pot of cool water, add 3 large pinches of salt. Slice a lemon in half and squeeze the juice into the water. Add the squeezed lemon halves and the 4 whole cloves of garlic. Add the potatoes and bring the water to a boil; boil lightly until the potatoes are fork-tender, 15 to 20 minutes. Drain the potatoes completely, allowing as much liquid as possible to drain off. Cool to room temperature.
  • Meanwhile, heat a large pan over medium-high heat and add olive oil to generously coat. Add the chopped garlic and saute until it just begins to soften but does not brown, 2 to 3 minutes. Add the potatoes cut-sides down in an even layer (you may have to do these in batches in order to not crowd the pan). Cook, flipping as necessary, until brown and crispy on all sides, about 8 minutes. Season with salt and red pepper. Add the oregano and the juice and zest from the remaining lemon. Stir to coat completely. Remove from the heat and serve!

GRANNY'S FRIED POTATO SLICES

I like this recipe because it is fairly easy to make, is quick to cook and inexpensive to make. I got the recipe from my father's mother when she was alive many years ago and she got it off of a lady she knew during the Great Depression of the 1930's. One tip I would like to make is to always make sure when cooking this recipe to have the cooking oil not only cover the top of the slices but underneath the slices as well in the deepest frying pan you have or deep fryer that you can also use. If you or your family like french fries a lot, then I am sure you will these, they are tasty but I am afraid addictive like french fries and fattening but enjoy them anyway!

Granny's Fried Potato Slices image

Steps:

  • You have to wash the potatoes before using them and then either peel them or leave skin on, then slice them across width ways into slices.
  • Mix the salt, baking, flour together in a mixing bowl, gradually add the water to it until it is the consistency of batter.
  • Preheat enough cooking oil in the either deepest frying pan you have or deep fryer to properly cook the potato slices.
  • Dip the potato slices into the batter you have made until coated on both sides and then place in the hot cooking oil and fry until golden brown and cooked. Then serve them.

  • Combine the potatoes, lemon juice, salt, pepper and oregano in a bowl, mix well and allow the potatoes to marinate for an hour or so.

  • Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
  • Put all the ingredients into a baking pan large enough to hold them.
  • Season generously with sea salt and black pepper.
  • Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
  • The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
  • Bake for 40 minutes.
  • When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
  • Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
  • This will take about another 40 minutes.
  • Do not be afraid of overcooking the potatoes- they will be delicious.
  • Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.
