GREEN JELLO SALAD

This is a refreshing jello salad that is a staple of our family get togethers. This is a recipe from my Grandmother. We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

Green Jello Salad image

Steps:

Dissolve gelatin in 2 1/4 cup boiling water.
Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
Add pineapple to gelatin.
Pour into 9 x 13 glass casserole and refrigerate until soft set.
Mix the softened cream cheese and milk together until combined.
Add the nuts to cheese/milk mixture.
Mix the jello mixture and cream cheese mixture together.
Refrigerate overnight and cut into squares to serve.

2 1/4 cups water
3 (3 ounce) boxes lime gelatin
1 (20 ounce) can crushed pineapple
8 ounces brick cream cheese, softened
1/2 cup milk
1 cup chopped pecans

GREEN STUFF (LIME JELLO, CREAM CHEESE, PINEAPPLE, COOL WHIP)

This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

Green Stuff (Lime Jello, Cream Cheese, Pineapple, Cool Whip) image

Steps:

Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
Mix cream cheese and pineapple in large bowl.
Add jello.
Beat until blended.
Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.

Steps:

Make Jello following the recipe on the box but using juice from pineapple instead of all water. Then add the pineapple, cream cheese (helps if you let is soften a little), mayo, cottage cheese, and horseradish. Use mixer to beat together.
If you want to make it decorative you can put the mixture into a Jello mold.
Place in fridge and let set.

Lime Jello and Pineapple Salad image

Steps:

Using a large bowl completely dissolve Jello in the boiling water.
Mix in sour cream and whisk until there are no lumps.
Stir in pineapple, carrots, celery and nuts.
Pour into a ring Jello mould.
Place in refrigerator and chill for at least three hours.
When ready to serve unmould Jello by dipping the bottom in very hot water for a few moments, place a plate over the top and turn upside down.

Steps:

In a large measuring pitcher, mix reserved pineapple juice and enough water to yield 2 cups. Pour into a pot and bring to a boil. Add the lime and lemon gelatin mixes and stir until completely dissolved.
Stir the mayonnaise and evaporated milk together in a mixing bowl. Stir in the gelatin mixture until completely blended. Mix in the crushed pineapple, cottage cheese, and pecans. Pour the gelatin mixture into a serving bowl. Refrigerate at least 4 hours or overnight.

Steps:

In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. Refrigerate until partially set., In a large bowl, beat cream cheese until smooth. Beat in pineapple. Fold in gelatin mixture, whipped cream, pecans and, if desired, food coloring. Pour into a 6-cup mold coated with cooking spray. Refrigerate, covered, until set. Unmold onto a serving plate.

Lime Jello Salad - Aka 'the Green Stuff' image

Steps:

Melt the marshmallows in milk in medium saucepan over medium heat. Stir frequently.
Pour the milk and marshmallow mixture over lime jello in a large bowl. Stir until dissolved. Stir in cream cheese with beater. Add undrained pineapple. Mix well.
Cool in the refrigerator for several hours or overnight.
Blend mayonnaise and cool whip into the jello mixture.

In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
