GRILLED CAJUN CHICKEN

A shake of paprika, a dash of red pepper and dried herbs--it doesn't take much to give simple chicken kickin' Cajun flavor.

Steps:

  • Heat gas or charcoal grill. In small bowl, combine all ingredients except oil and chicken breast halves; mix well. Brush oil over all sides of chicken. Sprinkle with seasoning mixture.
  • When grill is heated, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once.

Steps:

  • 1. Pull chicken breast from fridge 30 minutes prior to grilling to bring to room temperture.
  • 2. Combine all seasoning and whisk; set aside.
  • 3. Trim any excess fat from chicken and then rub evenly with olive oil. Sprinkle seasoning/rub evenly over chicken; rub to cover entire pieces.
  • 4. Heat grill over medium/high heat until literally smoking. You want to hear the meat sizzle once it hits the grill.
  • 5. Place breast on grill, cover and cook about 3 to 4 minutes on each side. Turn heat off and remove grill from heat. Leave meat in pan (covered) for abour 2 minutes and then remove to plate; cover with foil and let rest for 10 minutes before serving.
  • 6. NOTES: 3 steps to insure a tender moist piece of chicken: 1. Remove chicken from fridge 30 minutes prior to grilling. 2. Make sure the grill is smoking hot before you place the chicken in it. 3. Let the chicken rest (covered) 10 minutes before serving. I used a cast iron grill.

Steps:

  • Low-Sodium Recipe
  • 1. Neatly score each chicken breast on both sides with a sharp knife.
  • 2. Mix together in large bowl, Mrs. Dash® Extra Spicy Seasoning Blend, brown sugar and lemon juice. Add the breasts and coat thoroughly. Let rest 5-10 minutes.
  • 3. Heat a grill or cast iron grill plate. Spray with cooking spray.
  • 4. Grill chicken breasts on each side, 6-8 minutes, or until fully-cooked. Put on plate, cover, and let rest 3-4 minutes. Spoon remaining juices over the top of each breast.

2 Tbsp. Mrs. Dash® Extra Spicy Seasoning Blend
4 boneless, skinless chicken breasts
2 tsp. brown sugar
juice of one lemon
cooking spray

  • Pat the chicken breasts dry with a paper towel and drizzle with 1 tablespoon of oil. Sprinkle all of the Blackened Seasoning over the chicken breasts and rub all over to adhere. Don't worry if all of the seasoning doesn't stick to the breasts.
  • Add the remaining 2 tablespoons of oil to a large skillet over medium-high heat and allow it to come to temperature. Sear each chicken breast for 2 1/2 to 3 minutes on the first side, then flip, and sear 1 to 2 minutes more. Do not over-crowd the pan and sear in batches if needed.
