YAKITORI (GRILLED CHICKEN SKEWERS)

Yakitori is Japanese skewered and grilled chicken that can use approximately 30 different chicken parts, from momo, or chicken thigh, to nankotsu, or chicken cartilage. This recipe calls for marinating chicken thighs, gizzards and livers in a savory-sweet sauce of ginger, sake, mirin, soy sauce, garlic and a touch of brown sugar, grilling or broiling, then scattering with chopped scallions. Serve it alongside something fresh and green, like a cucumber salad, and a pile of rice.

Yakitori (Grilled Chicken Skewers) image

Steps:

  • Cut chicken into one-inch pieces and place in a shallow dish.
  • In a small saucepan, combine soy sauce or tamari, mirin, sake or sherry, brown sugar, garlic and ginger. Bring to a simmer and cook for 7 minutes, until thickened. Reserve 2 tablespoons sauce for serving. Pour remaining sauce over chicken, cover, and chill for at least one hour (and up to 4 hours).
  • If using wooden or bamboo skewers, soak them in water for one hour. Preheat grill or broiler. Thread chicken pieces onto skewers, and grill or broil, turning halfway, for about 3 minutes for livers, 10 minutes for gizzards and 6 minutes for thighs. Serve drizzled with reserved sauce and garnished with scallions.

Steps:

  • 1. Soak bamboo skewers in water for 30 minutes. Place all ingredients for chicken ball in food processor. Process until well mixed. Roll into golf ball size balls. Bring a pot of water to a boil and add the chicken balls and cook in boiling water until chicken balls change color and float to the top. Scoop out the balls with slotted spoon and drain on paper towels.
  • 2. To make the sauce put all ingredients except cornstarch and water is saucepan. Bring to a boil. Add the cornstarch slurry and cook until thickened a bit.
  • 3. Place the chicken balls on skewers and heat up a grill. Place the balls on the grill and grill brushing with the Yakitori sauce until golden brown.

12 oz ground chicken
2 lg eggs
1/2 tsp salt
2 tsp flour
2 tsp cornstarch
6 Tbsp breadcrumbs
1 Tbsp ginger grated
YAKITORI SAUCE
4 Tbsp sake
5 Tbsp shoyu or soy sauce
1 Tbsp each mirin and sugar
1/2 tsp cornstarch mixed with 1 tsp water

I grew up in Tokyo, and some of my favorite memories include eating chicken yakitori and other Japanese street food with my friends. Although we now live thousands of miles apart, my friends and I still reminisce about our nights sharing secrets and bonding over delicious meals. Steps:

  • In a small saucepan, combine the first 4 ingredients. Bring to a boil over medium-high heat. Remove from heat; set aside half the mixture for serving., Thread peppers onto 2 metal or soaked wooden skewers. Thread chicken onto 6 metal or soaked wooden skewers. Grill chicken, covered, over medium heat until meat is cooked through, 10-12 minutes, turning occasionally and basting frequently with soy sauce mixture during the last 3 minutes. Grill peppers, covered, until tender, 4-5 minutes, turning occasionally. Grill onions, covered, until lightly charred, 1-2 minutes, turning occasionally. Serve chicken and vegetables with reserved sauce for dipping.

  • Put all the ingredients for the chicken balls (except the ginger) in a food processor and blend well. Wet your hands and scoop about a tablespoonful of the mixture into your palm. Shape it into a small ball about half the size of a golf ball.
  • Squeeze the juice from the grated ginger into a small mixing bowl. Discard the pulp. Add the ginger juice to a small pan of boiling water. Add the chicken balls and boil for about 7 minutes, or until the color of the meat changes and the balls float to the surface. Scoop out and drain on a plate covered with paper towels.
  • In a small pan, mix all the ingredients for the yakitori sauce, bring the mixture to boil, and then reduce the heat and simmer for about 5 minutes or until the sauce slightly reduced. Transfer to a small bowl.
  • Thread 3-4 balls on to each bamboo skewer. Grill the skewers with an indoor grill or broiler or on a barbeque (preferred). Brush them with the yakitori sauce and turn the skewers frequently until the balls turn brown. Serve hot and sprinkle with shichimi togarashi (Japanese chile powder with sesame seeds) and some yakitori sauce if you like.
