GRILLED POTATOES OR ROASTED POTATOES ON THE GRILL
My favorite way to have potatoes. It works the best to do the first step (microwaving the potatoes) earlier in the day.

Steps:
- Cook potatoes in microwave until tender but firm (about 3-4 minutes).
- Cool (at least an hour works best) and cube.
- Microwave onion pieces for about 1-2 minutes so they are slightly soft.
- Mix with cubed potatoes.
- Coat thoroughly (but lightly) with olive oil and as much seasoning salt as you like.
- Place mixture on grill, I recommend using a vegetable/seafood grate, over hot coals. Cover to prevent flair-ups due to the oil.
- Cook approximately 20 minutes, until golden, turning about every 5 minutes.
- Serve with sour cream and/or ketchup.
- This method can be used for squash, broccoli, carrots etc.
- You can also use garlic salt or other spices like oregano in place of, or in addition to, the seasoning salt.

QUICK AND EASY GRILLED POTATOES
These are like a baked potato, but better! This recipe is so simple and makes a delicious side dish, a 'baked' potato that is soft in the middle and perfectly grilled on the outside. We dip ours in sour cream and green onions!

Steps:
- Poke each potato with the tines of a fork. Place the potatoes in a microwave oven, and cook on high power for about 5 minutes. Check about halfway through, and turn potatoes over for even cooking. Slice each potato in half the long way and cook potatoes another 2 minutes on high power.
- Preheat a grill for medium heat.
- Brush the potato tops with olive oil, and season with salt and pepper to taste.
- Cook on prepared grill for 15 to 20 minutes, turning once.

GRILLED POTATOES
When it is hot outside, who wants to heat up the oven and the house. These are great to go along side with any meat or fish dish. I clipped this recipe out of a Taste of Home Magazine. Updated 7/25/11, I now have made the recipe and the whole family loved the potatoes this way. I also added onion, but the recipe doesn't call for it. To really make it easy, I used "Simply Potatoes" already peeled and sliced potatoes, and used an 8"x8" foil pan; so quick and simple, yet so flavorful.

- On half of a 24-inch piece of heavy-duty aluminum foil, arrange the potato slices in overlapping rows.
- Combine garlic powder, seasoned salt, paprika and Parmesan cheese; sprinkle over the potatoes.
- Dot with butter.
- Seal foil over potatoes.
- Grill over medium heat for 30 minutes or until tender, turning once.
- Note: I cook it off the direct heat so I don't burn them, and I cook them for about 45 to 60 minutes.

- Toss 1 1/2 pounds small fingerling potatoes, 3 smashed unpeeled garlic cloves, 2 tablespoons each olive oil and chopped rosemary, 1/2 cup pitted Kalamata olives, wide zest strips from 1 lemon, 1/2 teaspoon kosher salt and a few grinds of pepper on a large sheet of heavy-duty foil. ROASTED GRILLED POTATOES

- Use an 8 inch round cake pan and spray it with pam.
- Thinly slice the potatoes and layer them in single layers.
- Top each layer with salt, pepper, garlic powder, onion flakes and dots of margarine.
- Cover the pan with foil and place on the grill, cooking 20 to 30 minutes on a medium setting.
- You want the potatoes to get crispy on the bottom without getting burned.
- (You may have to experiment a little.) These are great with any kind of meat you prepare on the grill!
GRILLED POTATOES
Steps:
- Heat grill to medium heat and oil the grates with cooking spray.
- Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
- Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.
GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.
GRILLED NEW POTATOES WITH TARRAGON BUTTER

- Preheat a grill to medium high.
- Mix the butter, tarragon, lemon zest, a large pinch of salt and a few grinds of pepper together in a small bowl.
- In a resealable plastic bag, toss the new potatoes with the olive oil, 1 teaspoon salt and a few grinds of pepper. Add the potatoes to the grill and cook, turning once or twice, until well-marked and tender, about 10 minutes.
- Serve the potatoes hot, topped with a generous spoonful of tarragon butter (remaining butter can be refrigerated up to 1 week).

- Preheat a grill to medium-high heat.
- In a microwave-safe casserole dish, add the potatoes in a single layer. Cover with a damp paper towel and microwave until tender, 12 to 15 minutes. Let cool for 5 minutes.
- In a small bowl, combine the garlic powder, salt, smoked paprika and black pepper.
- Drizzle the olive oil over the potatoes and toss to coat well. Add the spice mixture, rosemary and thyme and toss gently to coat.

- Scrub potatoes and pat dry.
- Slice into rounds 3/4" thick.
- Place in a saucepan, cover with water, bring to a boil, and boil 6 minute.
- Combine salt, pepper, and garlic ina small bowl and set aside.
- Drain potatoes and heat grill pan.
- Spray grill pan with non-stick spray, and place potatoes on grill pan in a single layer.
- Brush with melted butter and sprinkle lightly with seasonings- additional seasonings if you prefer (see below).
- Grill about 4 minutes, flip, brush with melted butter and seasonings again,and continue cooking until done.
- Optional seasonings (add into salt/pepper/garlic):.
- 1/2 tsp dried parsley.
- 1/4 tsp crushed dried rosemary.
- 1/4 tsp each oregano, rosemary, and basil.
- We have found that we can use butter flavored spray (like I Can't Believe It's Not Butter) or butter-flavored or olive-oil flavored non-stick cooking spray in place of the butter with great results.
