OUR BACKYARD GRILLED GARLIC-BUTTER SHRIMP
Simple flavors... Grilled shrimp, finished in a basic, yet 'oh, so good' garlic and butter sauce. I am not a shells-on gal but they make heck of a difference. Pick them off the serving plate and enjoy! Get a napkin--you'll need it.

Steps:
- Place parsley and olive oil into a resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours. Soak skewers in water during the last 30 minutes or so.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove shrimp from the marinade and thread onto skewers. Season generously with seasoned salt. Place parsley and remaining marinade in a grill-safe pan with butter and garlic.
- Grill skewers until shrimp are pink and firm, about 3 minutes per side. In the meantime, place the grill pan on the grate; melt and simmer the butter-parsley mixture until butter is just golden-brown, 4 to 5 minutes.
- Remove shrimp from skewers and drop into the butter-parsley mixture. Toss to coat. Serve immediately.

GRILLED SHRIMP WITH GARLIC BUTTER DIPPING SAUCE
Takes you to a quiet beach off the Mexico coast with the sun setting and the surf breaking...A favorite of ours when grilling in Mexico (or anywhere for that matter) - where the shrimp are so fresh and so cheap! Great with a cold beer in hand or a frothy, frozen concoction!

Steps:
- Combine marinade ingredients- cover and chill for 2 hours.
- Combine butter sauce in small saucepan over low heat until melted and well combined- can also be done in the microwave.
- Remove shrimp from marinade and grill until no longer pink and they turn an opaque color.
- For large shrimp this usually takes about 12-15 minutes.
- Serve with garlic butter sauce for dipping- YUM!
- The servings are approximate- as we have used this both as an appetizer and as a meal.
- Prep time is only good if your shrimp are already peeled/deveined- add additional time if you need to do this yourself.
GRILLED SHRIMP WITH GARLIC BUTTER FOR DIPPING
I found this recipe on about.com by Diana Rattray. The recipe sounded delicious and I didn't find one like it on site, so I am saving it to make soon. Marinade time is 2 hours, but I suspect it would still taste good with less time.

- Remove shells and devein shrimp.
- In a non-reactive bowl, combine crushed garlic, salt, lime juice, and olive oil. Put shrimp in bowl; stir to coat well.
- Cover and refrigerate for 2 hours.
- Thread shrimp onto skewers and grill 5 to 6 inches from coals for about 12 to 15 minutes, turning frequently.
- For Garlic Butter:
- In a small saucepan, melt butter. Add remaining ingredients; heat for 1 minute. Serve with shrimp.:.
GRILLED SHRIMP WITH GARLIC MAYO
Steps:
- Preheat grill to medium.
- Pat shrimp dry with paper towels, and place on bamboo skewers.
- Brush shrimp with 1/4 cup dressing, sprinkle with a generous amount of salt and pepper and place on the grill.
- Grill 2 to 3 minutes per side, or until shrimp are opaque and cooked through. Baste once, if desired.
- In a small bowl, combine mayonnaise with remaining 1 tablespoon of roasted garlic dressing, 1 teaspoon minced garlic, and 1 teaspoon paprika. Serve as a dip for the shrimp.
GRILLED GARLIC AND HERB SHRIMP
Steps:
- Whisk the paprika, garlic, Italian seasoning, lemon juice, olive oil, pepper, basil, and brown sugar together in a bowl until thoroughly blended. Stir in the shrimp, and toss to evenly coat with the marinade. Cover and refrigerate at least 2 hours, turning once.
- Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
- Remove shrimp from marinade, drain excess, and discard marinade.
- Place shrimp on preheated grill and cook, turning once, until opaque in the center, 5 to 6 minutes. Serve immediately.

GRILLED JUMBO SHRIMP WITH GARLIC-HERB BUTTER
A very simple recipe with just enough seasoning to enhance the flavor of the grilled shrimp without overpowering it. The best way to eat the shrimp is to peel them at the table and dip in extra butter sauce left over from the recipe. I have prepared the recipe with and without the rum - I do not find the rum to add anything special.

- In a small saucepan, combine the butter with the parsley, basil, garlic and shallot and melt over low heat.
- Light a grill or heat a grill pan.
- Halve the shrimp lengthwise, leaving them attached 1 inch below the head (if the head is left on). Devein the shrimp and spread them open. Season with salt and pepper, then brush liberally with the herb butter.
- Grill the shrimp over a medium-hot fire, shell side down, until lightly charred, about 1 minute.
- Turn and grill the other side until lightly browned, about 40 seconds. Turn the shrimp again. Brush them liberally with more herb butter, sprinkle with rum and grill until barely cooked through and bubbling, about 1 minute longer.
- Serve at once.

One of the quickest meals you can make in your smoker is shrimp, done in just 30 minutes. These shrimp are lightly seasoned to let the smoke flavor shine, but add more seasoning if desired. Because of the short smoke time, feel free to use a stronger-flavored wood such as hickory or mesquite. Serve with cheesy grits, rice, atop a salad, or as an appetizer with a remoulade sauce.

- Place shrimp in a resealable plastic bag. Sprinkle with Cajun seasoning and drizzle with olive oil. Toss shrimp around in the bag to evenly distribute seasoning. Refrigerate for 1 to 2 hours.
- Preheat a smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's instructions.
- Place butter in a microwave-safe dish and cook on high until completely melted, 20 to 30 seconds. Stir in lemon peel, garlic, red pepper flakes, and black pepper.
- Arrange shrimp in even rows in a 8x10-inch aluminum pan. Place thyme sprigs between each row. Drizzle butter mixture over shrimp.

- Light fire, and let coals ash, you want a slow-med fire.
- Sauté garlic in butter.
- Remove from heat and add lemon juice, salt, pepper, Worcestershire, and chives.
- Stir.
- Add shrimp.
- Marinate for 30 minutes.
- Put shrimp on skewers.
- Put foil on grill and lay shrimp skewers on foil.
- Grill for 6-10 minutes or until done.
GRILLED SHRIMP COATED WITH GARLIC AND HERBS
This is a variation of a common shrimp dish in coastal regions up and down Italy's Adriatic Sea coast. They just might be the perfect appetizer. Shrimp is coated with a mixture of only 4 ingredients then threaded on skewers. They are assembled well ahead and refrigerated until ready to quick grill. Most impressive is their taste, incredible. Although plain breadcrumbs seem to be favored in Italy with this dish, I prefer the added taste from seasoned bread crumbs. If using plain, lightly salt coating. Grilling skewers are best for maximizing flavors but coated shrimp can be oven broiled on a tray without skewers. Either way, try not to overcook. Bottom picture are the coated shrimp skewers. - Remove shells from the shrimp including tails; devein, rinse and thoroughly dry.
- Stir olive oil and garlic in oversized bowl large enough to hold all ingredients. Mix bread crumbs and parsley with the olive oil and garlic. Mixture should be moist.
- Coat the shrimp by tossing. Thread the shrimp onto skewers. Try not to overcrowd. Line them side by side on a sheet of plastic wrap or wax paper. When finished, sprinkle leftover breadcrumb mixture over the skewers and lightly press onto the shrimp equally on both sides. Seal the skewers in plastic wrap and refrigerate at least a few hours or overnight.
- Pre-heat the grill or broiler. Medium char the first side, about 2 to 3 minutes pending heat intensity. Flip over and cook until the shrimp is just cooked through, no longer translucent.
- Carefully removing shrimp from the skewers. Serve with lemon wedges.
- Notes: Although bamboo skewers are shown in the picture above, shrimp releases easier with metal skewers sprayed with non-stick.
