GRILLED STEAK WITH GREEN BEANS, TOMATOES AND CHIMICHURRI SAUCE

Stretch your strip steaks, a juicy and delicious cut of beef, by sharing them and serving them alongside a hearty serving of grilled green beans.

Grilled Steak with Green Beans, Tomatoes and Chimichurri Sauce image

Steps:

  • Place a double layered piece of heavy-duty foil on a tray or cutting board; fold and gather edge to form a rim. Toss the green beans and tomatoes on foil with 1 tablespoon olive oil; season with salt and pepper.
  • Preheat a grill to medium. Lightly oil the grill grates and season the steak with salt and pepper. Slide the foil tray onto the grill; cook, tossing occasionally, until the beans char slightly and cook through, about 15 minutes.
  • Meanwhile, add the steaks to the grill; cook until desired doneness, about 5 minutes per side for medium-rare. Remove steaks to cutting board to rest 5 minutes. Slice, and serve steak and the vegetables with the Chimichurri Sauce.
  • Chimichurri Sauce:
  • Combine the garlic, vinegar, herbs, olive oil and water in small food processor; pulse until herbs are coarsely chopped. Season with salt and pepper.

3/4 pound green beans, trimmed
1 pint grape tomatoes, halved
1 tablespoon olive oil, plus more for grill grates

1/2 small garlic clove
1 tablespoon red-wine vinegar
1/4 cup fresh herbs, such as parsley, mint and cilantro
1 tablespoon extra-virgin olive oil
1 tablespoon water
Kosher salt and freshly ground black pepper

Grilled Strip Steak with Blistered Tomatoes and Green Beans image

Steps:

  • Prepare a grill for medium-high heat. Toss beans with 2 Tbsp. oil in a large bowl; season with salt. Place beans on grill and cook, turning occasionally, until tender and lightly charred, 6-8 minutes.
  • Meanwhile, place a small skillet on grill; pour in 2 Tbsp. oil. Cook half of tomatoes, shaking skillet occasionally, until beginning to burst, about 3 minutes.
  • Oil grate. Season steaks with salt and coat with paprika, packing on more if needed. Drizzle with 2 Tbsp. oil. Grill steaks until lightly charred and an instant-read thermometer inserted into the thickest part registers 120°F, about 4 minutes per side for medium-rare. Transfer to a cutting board and let rest 10 minutes before slicing against the grain.
  • Halve remaining tomatoes and toss with chile, shallot, garlic, vinegar, grilled tomatoes, grilled beans, and 3 Tbsp. oil in a large bowl. Add basil, season with salt, and toss again. Combine steak and tomato mixture on a platter; drizzle with oil.

3 (1"-1 1/2"-thick) strip steaks (about 2 1/4 lb.), patted dry

1 garlic clove, finely grated
3 Tbsp. red wine vinegar

Steps:

  • To panbroil: Heat a stove-top ridged grill pan over medium-high heat for 5 minutes. Add steak to heated pan, cook half of recommended time; turn and continue to cook until done. 8 to 10 minutes for rare, 11 to 12 minutes for medium-rare. Season with salt and pepper after cooking. Serve immediately with a spoonful of softened butter on top.
  • To panfry: Heat a cast-iron pan over medium-high heat for 5 minutes. Add equal quantities oil and butter and heat until foaming subsides. Add steak, cook half of recommended time; turn and continue to cook until done. 8 to 10 minutes for rare, 11 to 12 minutes for medium-rare. Season with salt and pepper after cooking. Serve immediately with a spoonful of softened butter on top.

GRILLED NEW YORK STRIP STEAK

Have you ever wondered...How do I get those perfect diamond grill marks on my steak, slightly crispy texture on the outside, and pink and juicy on the inside. Well it's simple. Salt and Rest. Bring the steaks to room temperature (about 20 to 30 minutes). If you put the steaks on the grill while they are cold they will cool the grill down quickly and you won't get a good sear... and that means no good grill marks. Don't salt the meat while it is cold or the salt will absorb the moisture from the meat and cause it to steam rather than sear on the grill. So after the meat has reached room temperature, then salt and pepper it and let it rest an additional 5 minutes at least. After grilling the steaks to your liking let them rest again for 5 minutes or so. If done right you will be a hit at the dinner table. Happy Cooking.

Steps:

  • Trim all excess fat off steaks to prevent flare ups.
  • Preheat gas or charcoal grill to high heat. Approximatley 400 degrees.
  • Place Steaks over direct heat for 1 1/2 minutes then turn 90 degrees -- do not turn the steaks over yet.
  • After 1 1/2 minutes turn the steaks over and let cook for another 1 1/2 minutes, turn 90 degrees let cook for a final 1 1/2 minutes.
  • Remove from grill, let rest for 3 to 5 minutes and serve.

14 ounces New York strip steaks (1 inch thick)
