HAM 'N' CHEESE STRATA
Our daughter wouldn't mind if I made this Ham 'n' Cheese Strata every weekend! I do prepare it for each holiday, serving it alongside fresh cinnamon buns and a fruit salad. -Marilyn Kroeker, Steinbach, Manitoba

Steps:
- Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

HAM AND SWISS "ON RYE" CASSEROLE
Something I came up with using what was in the pantry and to use up some Christmas ham.

Steps:
- 1. Bring a large pot of water to a boil and add onion flakes and pasta; cook according to directions on package. Drain and return to pot.
- 2. Stir in ham, soup, milk and caraway seed. (Add more milk if needed to get consistency you want). Add salt and pepper, to taste.
- 3. Spoon half the mixture into a casserole dish that has been coated with non-stick cooking spray. Place 3 slices of cheese over this layer and top with remaining pasta mix. Top with remaining slices of cheese.
- 4. Cover with foil and bake in pre-heated 325F oven for 20 minutes. Remove foil and bake another 10 minutes.
- 5. Serve.

- Spray two 10-ounce oval or round individual casseroles with cooking spray. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook onion in oil about 2 minutes, stirring occasionally, until tender.
- Mix onion, bread, cheese and chicken; spoon into casseroles. Beat remaining ingredients with hand beater until blended; pour over bread mixture. Cover and refrigerate at least 2 hours but no longer than 24 hours.

- Place bread cubes in a greased 13x9-in. baking dish. Top with corned beef, Gruyere, sauerkraut and pickles. In a large bowl, whisk eggs, milk, dressing and garlic powder. Pour over bread. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, 45 minutes. Sprinkle with Parmesan. Bake until a knife inserted in the center comes out clean, 5-10 minutes longer. Let stand 10-15 minutes before cutting. Sprinkle with parsley.

My favorite deli sandwich ingredients all whipped up into a cozy hot breakfast treat! This is easy enough for any occasion, and elegant enough to impress the pickiest brunch connoisseur!

- Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
- While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
- Whisk together milk, egg, thyme, pepper, and salt.
- To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese. Repeat layers. Gently pour egg mixture over layers and top with remaining 1/3 swiss cheese. Cover tightly with aluminum foil and refrigerate* at least 4 hours, preferably overnight.
- To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
- Let strata rest 5 minutes before serving.
- *Refrigeration time not included in recipe prep/cooking time.

GARLICKY HAM AND SWISS

- Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.
- Lay out 4 slices of the bread on a work surface. Layer each with 1 slice of the cheese, some ham and then some of the cornichons. Top with 1 more slice of cheese. Close the sandwiches with the remaining bread and brush with butter until fully coated on both sides.
- Place 2 sandwiches into a medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches. If desired, rub the outside of the toasted bread with the garlic halves to add a little more garlic flavor.

- Beat together 8 eggs in a large mixing bowl. Add in your milk or half n' half and beat well. Add in your additional flavorings - in this case, mustard, spices, kosher salt and pepper.
- First, place your base layer of croissant (or bread) cubes in the bottom of the casserole dish. Top with shredded cheese, then ham and green onions.Finally, pour the custard mix over top of everything. Pour slowly and carefully to ensure that the layers remain even.Use a spoon or spatula to gently press down any pieces that appear dry. It's fine if they poke back up - once they have a little liquid in there, the process should continue during the resting phase.Cover the assembled strata with a piece of tinfoil and pop it in the refrigerator to rest overnight.
- Preheat oven to 350F. Once the oven hits 350F, pull your assembled casserole from the fridge and pop it straight in the oven (keeping the foil top) on the middle rack.Bake for about 30 minutes, then pull off the foil and return it to the oven.
