Country Ham and Apples image

Steps:

  • Soak apples in water overnight. Next day, place ham in simmering water and cook further until soft. Add apples and brown sugar. Cook for 1 hour. For dumpling, beat the egg, butter and milk. Sift dry ingredients and add to mixture. Use milk to stiff batter.
  • Drop dumpling dough by spoonful into boiling ham and apples. Cover tightly for 15 minutes. Serve immediately.

2 cups dried tart apples
1 1/2 pounds fully cooked ham
2 tablespoons brown sugar
1 egg
2 tablespoons melted butter
1/2 cup milk
2 cups flour
3 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Melt butter in a large skillet over medium-high heat. Add ham and onion; cook, stirring occasionally, until onion is translucent, about 8 minutes. Add garlic and cook until fragrant, about 2 minutes.
  • Add cabbage; cook and stir for 5 minutes. Add broth and season with salt and pepper. Cover and cook for 8 minutes.
  • Uncover and continue to cook until cabbage is tender, about 5 more minutes.

Steps:

  • Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Steps:

  • Remove the ham from its wrappings. Cut off the skin and make sure you remove the plastic thing that covers the end of the bone.
  • Stud the ham with the whole cloves, distributing them evenly over the surface.
  • Put ham and onions into a very large pot and cover with COLD water. Its important to use cold water because it draws the excess salt out of the meat and makes a more flavorful broth.
  • Bring to a boil slowly over medium heat. Reduce heat and simmer 15 minutes.
  • Add all the veggies except the cabbage. Raise heat and bring to a boil again. Reduce heat and simmer another 15 minutes or until the largest potatoes are nearly cooked.
  • Add the cabbage wedges. Raise heat and bring to a boil. Simmer another 10-20 minutes until cabbage is cooked but not mushy.
  • Use a large, slotted, serving spoon to remove all the veggies to a large serving dish.
  • Lift ham onto a platter and carve off a suitable number of servings for the meal.
  • Serve each person a slice of ham and a portion of each vegetable. Grind black pepper over the plate and offer butter for the potatoes and other roots if desired.

  • In a large skillet (and I mean large people, we're feeding an army, remember?) melt the butter for the fry. Peel the skin off the onions and cut them into thin rounds. Toss them into the butter, stir, cover, and let the onions cook until soft and just gently golden – about 8 minutes. Stirring every so often will keep them from burning – don't let that happen! A pinch of sea salt would be most welcomed at this point.
  • Now, into the same skillet, add in the apple and the dehydrated whole cane sugar. Give it another stir and allow the apple to cook with the onion for another 3 minutes before adding in the entire head of cabbage. Cover the skillet and allow the mixture to cook down for 5 minutes, stirring every so often.
  • Meanwhile, it's time to start the polenta! Heat the water in a saucepan until it's boiling. Pour in the polenta and whisk to combine. Cover the pot and turn the heat down to low.
