- Combine all ingredients except fat in a bowl. Refrigerate for 1 hour so mixture hardens. Preheat oil in deep fryer to 350°F. Roll cheese mixture into bite-sized balls. Fry 1 1/2 minutes or until golden brown. Remove from fryer and place on serving plate with paper towels to absorb grease. Dipping Sauce: Mix all ingredients.

- Combine jalapeno and cilantro together in a bowl. Coat both Manchego cheese wedges with the mixture.
- Mix all-purpose flour, water, and crushed ice together in a bowl until there are no lumps in the flour. Dip cheese wedges into the batter.
- Heat vegetable oil in a large saucepan over medium-high heat. Dip cheese wedges into hot oil and fry until batter is crispy and browned, 3 to 4 minutes. Transfer fried cheese to paper towels layered on a plate to drain excess oil.

HAM AND MANCHEGO PANINI WITH DIPPING SAUCE
Found this in a magazine article about the Spanish cheese, Manchego and am posting for ZWT. I loved this new cheese, BF wasn't so sure but he isn't the cheese freak that I am. I don't have a panini press so I use my cast iron grill pan which works great.

Steps:
- Divide ham and cheese evenly between two pieces of bread and top with remaining bread.
- Brush tops of sandwiches with 2 teaspoons oil.
- In a large nonstick skillet, heat remaining oil over medium-low heat.
- Place panini in skillet, oiled side up.
- Cover and cook until golden and cheese has melted, 5-8 minutes per side, pressing down with spatula occasionally.
- For sauce, mix together jam and dijon.

HONEY GLAZED FRIED MANCHEGO CHEESE

- Place the flour, egg, and panko bread crumbs in 3 separate dishes.
- Dip the cheese cubes into each ingredient to coat, starting with the flour and ending with the panko.
- Preheat the canola oil in a deep fryer to 375 degrees F, (or in a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F.) If you don't have a thermometer, a cube of bread will brown in about 3 minutes.
- Add the breaded cheese to the hot oil, in batches, and deep fry until the cubes are crisp and golden.
- Remove the cheese from the oil and place on a paper towel-lined baking sheet to absorb the excess oil. Transfer the cheese to a serving platter, drizzle with the honey, and dust with the paprika.

These fritters are made with cheese then fried in oil, so they are a perfect addition to your Hanukkah table. Serve them hot with jam on the side.

- In a medium bowl, beat the cottage cheese and egg together. Stir in the half-and-half, flour, baking powder, salt, sugar and nutmeg. Mix until just combined.
- Fill a deep pot to the 2-inch mark with oil. Heat to 375 degrees F (190 degrees C). Drop batter by rounded tablespoons into the hot oil. Fry until golden brown on all sides, about 3 to 4 minutes. Drain on paper towels and sprinkle with confectioners' sugar. Serve hot!
