Seared Hawaiian Ahi with Wild Rice and Basmati Rice in a Shiitake Teriyaki Beurre Blanc image

Steps:

  • Season the Ahi with salt and pepper. Heat 2 tablespoons of olive oil in a saute pan over medium-high heat. Sear the Ahi quickly until medium rare, or to your liking, about one minute on each side.
  • Set the Ahi aside and cook mushrooms in the same pan. Deglaze with sherry and reduce to medium heat. Add the scallions, teriyaki glaze, and buerre blanc to the pan and heat until combined and slightly thickened, about 3 minutes.
  • In another saute pan, heat the remaining olive oil and add the diced vegetables. Cook for 1 minute. Add the wild and basmati rice and season with salt and pepper to taste. When the vegetables are cooked and the rice is warm, pour the Japanese vinaigrette over the rice mixture.
  • Place 5 ounces of the rice mixture in the center of each plate. Pour two to three ounces of the Teriyaki buerre blanc mixture on 1/2 of the plate. Slice a 5-ounce portion of the Ahi into strips and fan over the rice and sauce. Garnish with scallions.
  • Combine the soy sauce, brown and white sugars, garlic, ginger, Japanese vinegar, and sake, and in a heavy-bottomed saucepot. Bring to a boil (the sauce will flame as the alcohol burns off). Dissolve the arrowroot in the water. Reduce the sauce to a hard simmer and add the arrowroot mixture. Simmer hard for 5 minutes more.
  • Beurre Blanc: Combine the wine, shallots, and vinegar in a small saucepan. Bring to a boil over medium-high heat. Continue boiling until 1 tablespoon of liquid remains. Lower the heat and whisk in the butter, piece by piece. When the butter is completely incorporated, remove from heat and salt to taste.
  • Japanese Vinaigrette: Combine first 5 ingredients in a stainless steel mixing bowl until blended. Using a wire whisk, pour in sugar and emulsify.

1 tablespoon water
1 cup white wine
1 tablespoon shallots, chopped
2 tablespoons rice vinegar
1 cup cold unsalted butter, cut into small pieces
Salt, to taste
1/2 cup white vinegar
1/3 cup mirin
1/4 cup seasoned rice wine vinegar
1/2 teaspoon soy sauce
1 teaspoon sesame oil
1/4 cup sugar

Steps:

  • Add tuna and sesame oil to a large mixing bowl. Gently mix until all the fish is coated in oil. Sprinkle salt evenly across the fish. Add the cucumber, onion, ogo, inamona, chile flakes, garlic and hot sauce and thoroughly mix until ingredients are evenly dispersed. Refrigerate 30 minutes. Divide into portions and serve.

4 to 5 pounds raw Ahi tuna, cut into 1-inch cubes
1/4 cup sesame oil
1 tablespoon Hawaiian sea salt
1/2 long seedless cucumber, cored and diced
1/2 sweet onion, diced
4 ounces ogo seaweed, coarsely chopped, or any finely shredded dry seaweed

This recipe was found in Whole Food's Salud cooking newsletter. I'm always game for a new poke recipe, so this will be one to try soon. Keep Ahi very very cold before prepping, and work quickly to avoid it warming up. You can even refrigerate the mixing bowl or put it on ice to keep the fish cold. This is important because the texture of the Ahi will degrade quickly if it warms up at all.

I've had this recipe at the Canoe House Restaurant and it is wonderful. Here's a little bit about the dish and the restaurant. At the Mauna Lani Bay Hotel on Hawaii's Kohala coast, CanoeHouse chef Pat Saito uses ono steaks (a type of mackerel) for this dish. Ahi tuna, which is easier to find, makes a good substitute. Saito serves the fish with wasabi-laced mashed potatoes.

Ahi Tuna With Vegetable Stir-Fry image

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat.
  • Add cabbage, mushrooms, bok choy, carrot and green onions and stir-fry until vegetables are crisp-tender, about 3 minutes.
  • Add 3 tablespoons oyster sauce and 3 tablespoons soy sauce; stir 1 minute to blend flavors.
  • Season to taste with salt and pepper.
  • Transfer vegetable mixture to medium bowl.
  • To same skillet (do not clean) add the broth, 1/2 tablespoon oil, remaining 3 tablespoons oyster sauce, remaining 1/2 tablespoon soy sauce, butter and vinegar.
  • Boil until sauce thickens, whisking occasionally, about 3 minutes.
  • Season with salt and pepper.
  • Keep warm.
  • Sprinkle tuna with salt and pepper.
  • Heat remaining 3 tablespoons oil in another large skillet over high heat.
  • Add 3 tuna steaks and cook to desired doneness, about 2 minutes per side for medium-rare.
  • Transfer to small baking sheet.
  • Repeat with remaining tuna.
  • Divide vegetables among 6 plates.
  • Top with tuna.
  • Ladle sauce around tuna.
  • Sprinkle with sesame seeds, if desired.
