HAWAIIAN WATERMELON SALAD

- 1. Place macadamia nuts in a food processor fitted with a metal blade and pulse a couple times just to chop them into large pieces. Place them in a nonstick heavy saute pan and toast over medium heat just until they turn golden, stirring constantly. Remove them to a heat-proof dish or bowl and allow them to cool. Peel and cut the bananas and papaya flesh into small chunks and toss them in lime juice. Place banana and papaya chunks in a large glass bowl with watermelon, pineapple, and coconut. In another bowl, mix together yogurt and papaya seeds. Pour over fruit and coconut. Toss to combine. Place in a serving bowl or coconut shells. Sprinkle toasted macadamia nuts over the top and serve immediately.
WATERMELON AND FETA SALAD
A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. Unassumingly simple, the sweet melon, salty cheese and fragrant basil reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.

- Stand the pineapple upright and vertically cut a third from one side, leaving the leaves attached. Set cut piece aside. Using a paring or grapefruit knife, remove strips of pineapple from large section, leaving a 1/2-in. shell; discard core. Cut strips into bite-size chunks. Invert shell onto paper towels to drain. , Remove fruit from the small pineapple piece and cut into chunks; discard peel. Place shell in a serving basket or bowl., In another bowl, combine the pineapple chunks, oranges, strawberries and grapes. Combine the yogurt, 1/4 cup coconut and extract; spoon over fruit and stir gently. Spoon into pineapple shell. Sprinkle with remaining coconut.
