HAWAIIAN SAUCE
This is a fantastic sauce to marinate and baste chicken, pork or fish. It is so versatile. You can also serve it on the side. It keeps well in the refrigerator for about 2 weeks. It also freezes well.

HAWAIIAN HOT CHOCOLATE
I created this drink from the memories of a trip to Hawaii, where I met my (now) husband. Surprisingly, it does get chilly in Hawaii, especially at night and in cold, rainy regions. This is a different take on the usual cold and frozen Hawaiian libations.

- Whisk half-and-half, milk, sugar, and cocoa powder in a saucepan over medium-high heat until cocoa and sugar dissolve. Remove from heat when mixture begins to steam, 5 to 10 minutes.
- Whisk vanilla extract, coconut extract, and salt into cocoa mixture. Pour into glasses and top each with whipped cream and toasted coconut.

Steps:
- Combine cornstarch and cocoa.
- Whisk into cold water in a saucepan until there are no dry bits.
- Cook, stirring frequently, until mixture comes to a boil.
- Stir 1 minute until mixture thickens.
- Remove from heat, stir in sweetener and vanilla, cover and allow to cool.
- Store in clean jar in refrigerator up to 6 weeks.
- Variation: Mocha Sauce: Substitute 2 cups strong coffee for water.

- Put chips in a microwave safe saucepan with butter on top. Microwave on medium for 2 minutes, then stir.
- Continue cooking at medium heat for 20 second increments then stirring until smooth.
- Add a spoonful of sour cream and stir well (this tempers the chocolate mix).
- Stir in the rest of the sour cream till well blended.
- Spoon over ice cream. YUM!

HAWAIIAN CHICKEN I
This was given to me by my best friend years ago and is a favorite of our family!

Steps:
- Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
- Preheat a grill for high heat.
- Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
- In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

- place butter, cream, milk and sugar in a pan over medium high heat.
- stir constantly.
- allow to come to rolling boil and take off heat.
- add chocolate and allow to sit for about a minute - to melt.
- stir until integrated.
- add vanilla extract, stir.
- serve over ice cream, dip cookies in it, eat it from the spoon.
- *you can add dark rum instead of vanilla, 1/2 of light cream instead of the 1/4 and 1/4, white sugar instead of turbinado, etc.
