BANANA PRUNE MUFFINS
They are so delicious - you wouldn't believe that something with prunes would be so good, but they are! And they are low in fat - 1 muffin is less than 5grams of fat. They are so moist and not rubbery or chewy! A definite must try. I had the whole lot devoured in a day.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
- In a large bowl, combine sugar, oil and eggs. Beat until smooth. Blend in banana and vanilla. Mix together flour, baking powder, baking soda, salt and cinnamon, then stir into egg mixture until just moistened. Mix in the prunes. Spoon into muffin cups.
- Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

- Bake for 20 minutes in the preheated oven, or until lightly brown.

Steps:
- First, mash bananas in large bowl. Then, add vanilla and salt. Stir. Then add prunes, raisins, flax meal, coconut, and chopped nuts. Stir. Last, add oats and stir again. Spoon heaping tablespoon onto baking sheet and flatten slightly with a fork (these cookies will not flatten on their own, so you have to do it before you cook them). Cook for 20 at 350 degrees. Let cool and enjoy!

- Mix the flour, baking soda, cinnamon, and salt; set aside.
- In a separate bowl mix together the brown sugar, sugar, oil, and water.
- Add the banana and vanilla.
- Stir in the flour mixture. mix well.
- Stir in the oats.
- If the mixture seems too thin, let it sit for a minute so the oats can absorb some of the excess liquid.
- Preheat oven to 350°F.
- Drop cookies by the tablespoon onto a greased cookie sheet.
- Cook for 13 minutes until done (they should be a bit browned on the bottom).
