HEARTY BEEF AND NOODLES

A yummy, hearty dish that everyone will like. And it's not that difficult to make. This sounds to me like something my mother or grandmother would have made. I can't wait to try it.

Hearty Beef and Noodles image

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onions and cook about 10 minutes or until starting to get browned. Remove to a bowl and reserve.
  • In the same skillet heat remaining olive oil over medium-high heat. In a plastic bag, combine the flour, thyme, salt and pepper. Add the beef cube and toss, shaking off the excess.
  • Add beef to skillet and brown all sides. When browned and bits are starting to stick to the bottom of the skillet, add the beef broth, balsamic vinegar, carrots, and peas plus the onions.
  • Simmer, covered, 30 minutes, stirring occasionally.
  • Meanwhile, cook the bowties in salted water according to package directions. Drain, rinse, and set aside, covering to keep warm.
  • When beef is cooked through and carrots are tender, stir in parsley and season with salt.
  • Serve beef over warm pasta.

1 cup flour
1 tablespoon dried thyme
1 teaspoon salt
1 teaspoon pepper
1 1/2 lbs beef round steak, cut into 1-inch cubes
3 cups beef broth
3 tablespoons balsamic vinegar
3 medium carrots, thinly sliced
8 -10 ounces frozen peas (about 1 cup)
10 -12 ounces uncooked bow tie pasta
1/4 cup chopped fresh parsley
salt

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles. Add garlic; cook 1 minute longer. Drain. Stir in tomato puree, broth, Italian seasoning, Worcestershire sauce, salt and pepper. , Bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-15 minutes. Add spinach; cook until wilted, 1-2 minutes. , Drain pasta; stir into beef mixture. Sprinkle with cheese; cover and cook until cheese is melted, 3-4 minutes. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

Steps:

  • In a large skillet, brown beef in oil on all sides; remove and keep warm. In the same skillet, saute onion and garlic until tender.
  • Return beef to the pan; stir in the soup, water, cream, coffee and gravy mix. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until meat is tender, stirring occasionally.
  • Meanwhile, cook noodles according to package directions. Add the sour cream, paprika and pepper to skillet; heat through. Drain noodles. Serve with beef.
