STRAWBERRY-VANILLA FREEZER JAM

- Wash, hull, and coarsely chop strawberries in a large glass, ceramic, or stainless steel bowl. Mash with a potato masher to a fine texture, 1 or 2 minutes. Add sugar, lemon juice, and vanilla bean paste. Stir well and let stand until berries have released some of their juice, about 30 minutes. Add pectin, 1 tablespoon at a time, stirring until well combined after each addition. Let stand 5 minutes to activate pectin.
- Spoon jam into clean, wide-mouth, half-pint jars, leaving 1/2-inch headspace. Wipe rims clean with a damp paper towel. Loosely apply clean lids and set jars in freezer. Freeze completely, about 5 hours.
- Tighten lids. Store in freezer up to 1 year or in fridge up to 1 month.

HEAVENLY JAM
This is an old recipe that has been in my family for a very long time. Again, as in many Mennonite recipes the measurements aren't exact since it's hard to expect how many cups chopped fruit with be. You will need equal cups for sugar to cups of fruit. Ex. 4 cups of fruit and 4 cups of sugar.

- Wash the oranges and lemons and slice thinly. Put them in a pot with just enough water to cover the fruit. Let it stand in the water overnight. Don't drain the water but cook them in it until they're soft. Wash and peal the remaining fruit. Add to the citrus mixture starting with the firmest fruit first. Cook a bit longer until all the fruit is tender. Measure the fruit and add equal amounts of sugar to the fruit. Boil it slowly until it's thick like a syrup. The jam with thicken more as it cools. Stir in quartered maraschino cherries for colour. Pour into hot sterilized jam jars and seal with the lid. The lids should pop on their own if the jars were hot prior to pouring the jam into them.
PEACH MELBA JAM
I found this recipe online, in answer to a request. I have not tried this recipe personally. PLEASE NOTE: This is a freezer jam. This jam must be kept in the freezer and once thawed, in the refrigerator. This is NOT shelf stable jam.

- Combine peaches and sugar in a saucepan.
- Cover and let stand at least an hour to macerate (release juices), tossing once or twice.
- Cook over low heat until sugar dissolves and mixture darkens and turns clear, 25 to 30 minutes stirring as needed to keep from sticking (make sure you don't let it burn!) Add raspberries,continue cooking over low heat,stirring constantly, until mixture is thick, about 10 minutes.
- Stir in Chambord and remove from heat.
- Immediately pour into 2 hot sterilized 1 pint canning jars.
- Once jars are sealed, let them cool completely upside down on top of a clean kitchen towel, and store in the fridge (use up by 2 weeks) or in the freezer.
VANILLA PEACH JAM

- Peel, pit and chop peaches.
- In saucepan combine peaches,lemon juice, and pectin.
- Cook over high heat stir constantly about 5 minutes or until full rolling boil.
- Stir in sugar.
- Return to a full rolling boil.
- Boil hard for (1) minute stir constantly.
- Remove from heat and add vanilla extract and bourbon (bourbon is optional).
- Skim off foam.

- Place pear in a food processor; pulse until finely chopped.
- Place pear, rind, juice, and vanilla bean in a large saucepan.
- Stir in pectin.

- Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
- Peel and pit peaches. Finely chop or grind peaches. Measure exactly 3 cups prepared fruit into large bowl. Stir in sugar, lemon juice and vanilla paste. Let stand 10 min., stirring occasionally.
- Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Cook and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
- Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

- In a large bowl, combine crushed peaches, lemon juice, and sugar. Stir to combine. With the tip of a paring knife, scrape the seeds from the vanilla bean and add the seeds to the peach mixture. Stir to combine, breaking up any clumps of vanilla beans. Let stand 10 minutes, stirring every couple of minutes.
- In a small saucepan over high heat, stir together water and pectin. Bring to a boil, stirring constantly. Boil and stir for 1 minute. Add pectin mixture to peach mixture and stir constantly for 3 minutes, or until sugar is dissolved and no longer grainy. If a few sugar crystals remain, that's ok.
- Immediately fill containers to within 1/2'' of container tops. With a damp paper towel, wipe off the edges of containers. Immediately cover with lids. Let stand at room temperature for 24 hours. Because this jam does not go through the full canning process, it must be stored in the refrigerator or freezer.

- Peel the peaches, cut into large pieces and add to a large mixing bowl. Use a potato masher to crush the fruit. Whatever chunks of fruit you see are what will appear in your jam. If you like it chunky, just mash a little; if you want it smooth, go more heavy-handed with the masher.
- Add the sugar and lemon juice to the bowl of peaches, stir to combine, and let sit for 10 minutes. Transfer the peaches mixture to a saucepan. Slice the vanilla bean and scrape the seeds into the peaches. Toss the bean pod in as well. You do not need to “cook” this mixture, you are just using some heat to draw out the vanilla flavoring from the bean. Simmer the mixture until it is warmed through and you can smell the vanilla.
- Remove the vanilla pod and transfer the mixture back to your original mixing bowl. Allow to cool a bit (shouldn’t take long since the mixture shouldn’t be too hot.)
- Working in about 2 separate batches: Measure out 2 1/3 cups of peaches mixture and add 1/4 cup of the pectin. Stir to combine for 3 minutes. Ladle into clean freezer jars, leaving 1/2 inch room at the top of the container and let stand for 30 minutes.
