HEAVENLY SHRIMP DIP

This shrimp and cream cheese dip is easy to prepare and always popular. For best results, serve the cream cheese at room temperature and the cocktail sauce well chilled.

Steps:

  • Place cream cheese in center of serving platter.
  • Mix together cocktail sauce and shrimp. Pour mixture over cream cheese.
  • Slice lime in half; squeeze one half over cocktail sauce. Slice other half into wedges for garnish.
  • Place crackers and lime wedges around edge of plate and serve.

Steps:

  • Bring medium saucepan of lightly salted water to boil. Add shrimp and cook just until bright pink and opaque in center, about 3 minutes. Drain; rinse under cold water. Peel and devein shrimp; transfer to processor. Add green onions, shallot, and tarragon; using on/off turns, process until shrimp are finely chopped. Transfer shrimp mixture to medium bowl. Mix in mayonnaise and next 3 ingredients. Season to taste with salt and pepper. Cover and chill at least 2 hours. (Can be made 1 day ahead. Keep chilled.)

2 tablespoons chopped fresh tarragon
1 cup mayonnaise

1/2 teaspoon Worcestershire sauce

Steps:

  • Combine flour, salt, and pepper in a shallow bowl then dredge shrimp in it.
  • Heat 2 tsp of the oil in a large nonstick skillet over medium-high heat.
  • Add the shrimp to the pan and saute' 5 minutes or until golden.
  • Remove shrimp and set aside.
  • Add 1 tsp oil to the pan.
  • Add garlic and mushrooms and saute' 3 minutes.
  • Add tomato and cook 1 minute.
  • Stir in the shrimp, wine, and water.
  • Bring to a boil then reduce heat and simmer 2 minutes or until sauce thickens.
  • Serve over pasta.
