BROILED HERB BUTTER CHICKEN

Chicken breasts broiled with an herb butter seasoned with garlic, parsley, rosemary and thyme. Comes out nice and juicy!

Broiled Herb Butter Chicken image

Steps:

  • Preheat oven to Broil/Grill and line broiler pan with aluminum foil.
  • Place chicken on pan. In a small bowl combine the butter, garlic, parsley, rosemary and thyme and mix together, then evenly spread a dollop of mixture on each chicken breast.
  • Broil in preheated oven, turning and frequently coating with remaining herb/butter mixture, for about 15 minutes or until chicken juices run clear.

Lemon & herb chicken traybake with butter beans & potato wedges image

Steps:

  • Cut the potatoes into large wedges, then toss well in a large bowl with 2 tbsp of the olive oil and some salt. Spread the wedges out on a baking tray.
  • Fry the onion and garlic in the remaining olive oil over a low heat until soft and translucent. Add the tomatoes, butter beans, and some seasoning. Simmer for a few minutes, then pour into a baking tin or dish.
  • Mix a pinch of salt with the herbs. Stuff equal amounts under the skin of each chicken thigh. Put a slice of lemon on top of each thigh, then arrange on top of the tomato and bean mixture in the baking tin.
  • Bake the wedges and chicken traybake in the oven at 180C/160C fan/gas 4 for 45 mins until the chicken is cooked through. Check the potatoes after about 30 mins, shaking them around in the tray - depending on the size of the wedges, they may already be cooked through.

Baked Lemon-Butter Chicken Thighs image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place 3 tablespoons butter in a microwave-safe bowl and heat in a microwave oven until melted, 1 to 2 minutes. Smash garlic cloves with the side of a chef's knife and add garlic to the warm butter. Stir in lemon juice and onion powder. Set aside.
  • Sprinkle both sides of chicken thighs with salt and pepper. Heat remaining 1 tablespoon butter in a medium-sized oven-safe skillet over medium-high heat. Brown chicken, skin-side down, for 3 to 4 minutes. Flip chicken over and brush skin with lemon-butter mixture. Pour remaining butter mixture into skillet and remove from heat.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Brush skin every 10 minutes with pan juices.
  • Remove skillet from the oven and place chicken on a serving platter. Drizzle chicken with pan juices and garnish with parsley.

  • In a 10 to 11-inch skillet, heat olive oil over medium-high heat. Add chicken thighs, skin side down and allow to cook until golden, about 5 minutes. Flip and cook on the other side for about 3 minutes more. Remove chicken to a plate.
  • Remove and discard all the fat in the pan from the chicken thighs. Reduce the heat under the pan to medium-low. Add the butter to the pan and melt. Add the Spice Mix, onion, garlic and ginger to the pan and cook, stirring, until onion is softened, about 3 minutes.   • Gently stir in coconut cream or milk and fenugreek leaves, if using (If helpful, you can remove a couple of the chicken thighs from the skillet temporarily to have more room to stir). Taste sauce and season with salt and freshly ground pepper, as needed.
  • For yogurt sauce, if using: Combine all ingredients in a small bowl. Use immediately or cover and refrigerate if making ahead.
