Steps:
- Preheat broiler Combine 2 tablespoons Parmesan, breadcrumb, parsley, basil and 1/8 teaspoon salt in shallow dish.
- Place egg white in a shallow dish.
- Dip each chicken tender in egg white, dredge in breadcrumb mixture.
- Melt butter in a large nonstick skillet over medium-high heat.
- Add chicken, cook 3 minutes on each site or until done. Set aside.
- Combine 1/2 teaspoon salt, spaghetti sauce, vinegar and pepper in a microwave safe bowl.
- cover with plastic wrap, vent.
- Microwave mixture at HIGH 2 minutes or until thoroughly heated.
- Pour over chicken in pan.
- Sprinkle evenly with remaining Parmesan and provolone cheese.
- Wrap handle of pan with foil broil 2 minutes or until cheese melts.

- Cook noodles according to package directions. Meanwhile, broil chicken 6 in. from the heat until juices run clear; let stand for 15 minutes or until cool enough to handle. Shred chicken with two forks. Drain noodles; set aside., In a large nonstick skillet, combine the shredded chicken, tomatoes, tomato paste, mushrooms, onion, basil, 3/4 teaspoon salt and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes. In a bowl, combine the cottage cheese, egg substitute, Parmesan cheese, parsley, pepper and remaining salt., In a 13x9-in. baking dish coated with cooking spray, place half of the noodles, overlapping them. My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

- Preheat an oven to 450 degrees F (230 degrees C).
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
- Beat eggs in a shallow bowl and set aside.
- Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
- Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
- Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
- Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
- Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
- Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:
- Remove the tenderloins from the chicken and reserve for another recipe.
- Slightly flatten the chicken breasts with a mallet.
- Combine the herbs, bread crumbs, grated cheese and salt and pepper.
- Slowly drizzle the olive oil over the mixture, lightly working the crumbs with your fingertips until the mixture is loose and fluffy.
- Spread the coating out on a cookie sheet.
- Dip the chicken breasts in the egg white. Drain off the excess.
- Firmly press each breast in the crumb mixture and press to coat thoroughly.
- Lay the chicken on a waxed paper lined plate and refrigerate for 1 hour, uncovered.
- Cook the chicken breasts on a grill for about 3 minutes per side, or until juices run clear.
