HOMEMADE BUTTER IN A BLENDER
Posted in response to a request. It actually makes approximately 3/4 cup butter but it wouldn't take a fraction.

Steps:
- Pour the cream into the blender container and cover.
- Blend on the lowest speed until the cream begins to thicken around the blades.
- While continuing to blend, pour the ice water through the opening in the lid.
- Raise the speed to the 4th lowest speed and blend until butter forms, about 2 minutes longer.
- Transfer the butter into a strainer to drain.
- Then pack it into a butter mold or form into squares and chill.

You can make great tasting butter at home just by putting heavy cream in a food processor and running it till it turns into butter.

Steps:
- Pour cream into a food processor or blender. Process for 10 minutes, or until the butter separates. Strain off the liquid. Season to taste with salt if you like. Press butter into a small bowl with the back of a spoon to further remove liquid.

- Pour chilled cream into blender. Blend on medium speed for 2-10 minutes until it resembles butter.
- If cream does not "flow" in the blender, turn it up on high speed for a minute or so and then back to medium speed. You can also use a tamper or spatula to help the cream move.
- Once it looks like butter drain the liquid from it. This is buttermilk and you can use it for other cooking, like pancakes.
