MEATBALL STEW
Many years ago, the Farm Journal published a recipe that became the "jumping-off point" for my version. It's as colorful as it is delicious. I often serve it over wide egg noodles or atop steamed rice-but it's also good just as it is.-Savilla Zook, Seabrook, Maryland.

SIMPLE MEATBALL STEW
The combination of tender meatballs plus potatoes, carrots and pearl onions in a golden gravy really hit the spot on chilly days after we'd worked up an appetite doing our morning chores. Mom served it with pride for Saturday dinners when I was growing up on the farm.

HOMINY MEATBALL STEW
I found this recipe in the TOH's 2009 The Best Of Country Cooking Annual Recipes. It was sent into them by Diane Tennison of Lafayette, Louisiana. She wrote in her description " For a less spicy version, substitute plain canned tomatoes for the Mexican blend " . But since I wanted just a bit of spice, I used one can of Ro-Tel and one can of fire roasted diced tomatoes with garlic. This recipe calls for making your own meatballs, but if you are in a hurry I'm sure thawed frozen ones would work as well.Submitted to " ZAAR " on February 24th., 2010.Re-posted to Just A Pinch 6/29/12

After making the meatballs, fry a little bit of the meat to see if you want to add a bit of oregano and or garlic. Submitted to " ZAAR " on February 24th., 2010.UPDATE on 3/18/10: I found out that this freezes and reheats very well :). If you like you can add garnishes of fried tortilla strips, green onions and sour cream.

- Pinto Posole. As I said, posole is the first dish most people think of when hearing the word hominy. So to kick off this list is none other than one of my favorite vegan versions.
- Hominy Au Gratin. Do you love gratin? Try something new and make it with hominy. It’s super cheesy and creamy like regular gratin; except with each bite, you get the earthiness of hominy and salty bacon bits to boot.
- Beef and Hominy Casserole. This casserole is brimming with savory, cheesy, and tomatoey goodness. It’s also rich in protein and uses up a lot of ingredients that are hiding in your pantry.
- Blue Cheese Hominy Casserole. If you think casseroles can’t be adventurous, you’ve never tried this. The bite of blue cheese, smokiness of paprika, and bounty of hominy are far from subdued.
- Pinto Bean and Hominy Salad. You can also eat hominy fresh like this easy Texan-style salad. It’s full of garden-fresh veggies, pinto beans, and chewy hominy.
