Steps:
- Preheat the oven to 425°F (175°C). To prepare the marinade: In a medium bowl, add the balsamic vinegar, honey, a tablespoon of olive oil, garlic, thyme, rosemary, chili flakes, salt and pepper; mix well. Place the chicken breasts in a resealable plastic bag and pour the marinade over the top. Seal and toss the chicken to evenly coat. Marinate for at least 30 minutes. Meanwhile, place the potatoes and cherry tomatoes on a sheet pan. Drizzle with the remaining olive oil, season with salt and pepper, and stir to coat. Bake for 25 minutes. Remove the sheet pan from the oven and toss the green beans with the potatoes and tomatoes. Remove the marinated chicken breasts from the plastic bag, reserving the remaining marinade in the bag. Place the marinated chicken, evenly spaced, on top of the vegetables. Pour the marinade from the bag over the top of the chicken and vegetables. Return the sheet pan to the oven. Bake for 30 to 40 minutes, periodically basting the chicken breasts with the pan juices, until the internal temperature of the chicken reaches 165°F (74°C). Allow the chicken to rest for 5 to 10 minutes. Spoon the pan juices over the top of each chicken breast before serving and enjoy.

HONEY BALSAMIC CHICKEN
This is super yummy and very easy to make, you can serve it with veggies or potatoes to round it out. I got it out of a weight watchers cookbook years ago I believe, but can't find the actual recipe, most of it is just by eye.

- Season the chicken on both sides with salt and pepper then set aside. Place a large skillet over medium heat and allow it to get hot. Add oil then place seasoned chicken skin side down into the pan. To make more of the skin come in contact with the heat, place a pot or smaller skillet on top of the chicken to weigh it down.
- Allow chicken to fry undisturbed for 8–10 minutes, until skin is crispy and deep golden brown. Flip chicken and cook 3 minutes on the second side then transfer to a plate and set aside. Chicken will still be undercooked at this point.
- Remove all but 1 Tbsp of oil from the pan and return pan to heat. Add the sliced onion and cook, stirring frequently for 2–3 minutes until they become translucent. Add garlic and cook for 30 seconds then add the balsamic vinegar, chicken broth, honey and thyme or bay leaf.
- Bring liquid to a boil and return chicken and any accumulated juices back into the skillet. Reduce heat to medium-low and allow chicken to cook in simmering sauce 15–20 minutes or until chicken is cooked through and the sauce has reduced and slightly thickened.

- Preheat the oven to 425 degrees Fahrenheit and adjust the oven rack to the middle position. Line a baking sheet with parchment paper and set aside.
- Mix together all the ingredients under "chicken marinade" and toss the chicken thighs well. Set aside while you prepare the vegetables. I like to let the chicken sit for about 30 minutes to let everything really marinade. However, if you have the time to let it sit overnight, that's even better. See my notes below!
- In a large bowl, add all the vegetables and toss them in garlic, avocado oil, salt, and pepper. Mix well. Transfer to the prepared baking sheet and make sure they are spread out evenly in one layer. If there is not enough room, use a second sheet.
- Place the chicken thighs on top of the vegetables and bake for 35-40 minutes or until the internal temperature of the chicken reads 165 degrees Fahrenheit.
